Recipe details
Ingredients
- 2 medium sweet potatoes
- 1 tablespoon cornstarch (corn flour)
- 1 teaspoon red chilli powder (adjust to taste)
- ½ teaspoon salt (or as needed)
- 1 tablespoon oil (optional for extra crispiness)
Instructions
- Peel (optional) and cut sweet potatoes into even-sized fries.
- Bring water to a boil in a pan.
- Add the sweet potato fries and boil for 5–6 minutes.
- Drain immediately and pat them completely dry with a kitchen towel.
- In a bowl, combine the fries with salt, red chilli powder, and cornstarch.
- Toss well so the fries are lightly coated.
- Drizzle little drops of oil for extra crispiness and mix again.
- Preheat the air fryer to 200°C (390°F).
- Arrange fries in a single layer in the basket (do not overcrowd).
- Air fry in batches for 15 minutes, shaking the basket halfway through.
- Remove and let rest for 2–3 minutes so they crisp up.
- Serve hot with ketchup, mint chutney, or garlic yogurt dip.
Tips
- Cut evenly: Make sure the fries are of similar thickness so they cook evenly.
- Parboil first: Boiling for 5–6 minutes makes the inside soft and keeps them from drying out.
- Dry thoroughly: After boiling, pat the fries completely dry before seasoning to get a crisp texture.
- Light cornstarch coating: A thin dusting of cornstarch helps create a crunchy outer layer.
- Don’t overcrowd: Air fry in batches so that hot air circulates properly around each fry.
- Shake halfway: Shake the basket once during cooking for even browning and crispiness.
