Corn Pudding

I never heard of this until I met my husband who was my boyfriend at the time, I had this when I went to Thanksgiving at his family’s home and it’s been a staple for years at my home, no fancy ingredients and made in one bowl!

I doubled this recipe to fill a 9x13 pan which was enough for 15 of us

You’ll need one box of Jiffy corn muffin mix

One can or creamed style corn and one can aid regular whole kernel corn

Melt one stick of butter in a microwaveable bowl (I doubled it here)

Add the corn muffin mix to the melted butter

Then add the creamed corn

And the whole kernel corn

add two while eggs

And one 16oz sour cream

Mix all the ingredients thoroughly until fully combined

And add to a casserole dish or a tin, cook in preheated 350 degree oven for one hour or until a toothpick inserted in the middle of casserole comes out clean

Not only is this a great side dish foe Thanksgiving but its great for any Fall or winter meal!

Ingredients
For the casserole
  • One stick butter melted
  • one 15 oz can creamed corn
  • one 15 oz can whole kernel corn
  • One 16 oz sour cream
  • one box Jiffy Corn Muffin mix
Instructions
To make the corn pudding
Heat oven to 350
mix all ingredients in one bowl until fully combined
pour into a 9x9 casserole dish and bake for 1 hour
