The Best From Frozen Brussels Sprouts

Growing up, I was never a huge fan of brussels sprouts. I didn't understand how one could possibly enjoy the taste and texture of such a vegetable, and to be honest, up until a few years ago I never bothered trying them again. That is, until I tried them at a restaurant and fell in love with them. They way they had prepared the brussels sprouts was so simple but absolutely delicious. The Brussels sprouts were roasted and then topped with crunchy Parmesan and balsamic. After a few experiments, I finally nailed the recipe, and now this has become one of my favourite vegetable sides to serve along with a meal.

Preparing roasted brussels sprouts has never been easier. I like to use frozen ones, as they are already washed and ready to enjoy. I have never had any bitter ones that you will sometimes get when they are fresh. The frozen brussels sprouts always come out perfectly tender with a slightly crunchy outer layer.
Spread out one bag of frozen baby brussels sprouts onto a parchment paper lined baking sheet. I like to add a few chopped shallots to the tray as well for some extra flavour. Drizzle a few tablespoons of olive oil over the brussels sprouts and season with salt and pepper to taste.
Place the tray in the oven and bake at 350 for 30 minutes.
After 30 minutes, remove the tray from the oven and turn up the temperature to 425.
At this point, the brussels sprouts will be fork tender.
Sprinkle a few tablespoons of Parmesan cheese over the brussels sprouts and then put the tray back into the oven at 425 for 10–15 minutes.
Once everything has caramelized and is a beautiful golden colour, remove from the oven.
The Parmesan cheese has baked to a delicious crunchy topping that adds SO much flavour to the brussels sprouts.
To elevate the dish even more, I like to add a drizzle of balsamic glaze (not to be confused for balsamic vinegar) to the Brussels sprouts. Gently toss the brussels sprouts until everything is evenly coated and serve immediately.
The flavour combination of this dish is unreal, I could seriously devour the entire thing. I am so happy I decided to try this vegetable again, because it is now one of my absolute favourites.

- 1 500g bag frozen baby brussels sprouts
- 2 shallots
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp Parmesan cheese
- Balsamic Glaze
Instructions
- Preheat oven to 350
- Spread out one bag of frozen baby Brussels sprouts onto a parchment paper lined baking sheet.
- Add two chopped shallots to the tray and drizzle a few tablespoons of olive oil over the brussels sprouts. Season with salt and pepper to taste.
- Place the tray in the oven and bake at 350 for 30 minutes.
- Remove the tray from the oven and turn up the heat to 425.
- Sprinkle a few tablespoons of Parmesan cheese on the brussels sprouts and then put the tray back into the oven at 425 for 10–15 minutes.
- Once the cheese is crispy and golden brown remove the tray from the oven.
- Drizzle on a bit of Balsamic glaze to taste and gently toss until evenly coated.
- Serve and enjoy immediately.
