- 1/2 Bell Pepper (42.5 g)
- 1/2 Onion (50 g)
- Garlic (1/2 tsp)
- Cilantro (4 g)
- Tomato (27.5 g)
- Pickled Jalapeño (2.5 ml)
- Mango (1/2 large, 1/4 for crema)
- Spice Blend* (7.5 ml)
- Sour Cream (1 tbsp)
- Tortillas (3)
- *Spice Blend: 1/2 tsp Chili Powder, 1/4 tsp Smoked Paprika
Instructions
- Preheat the oven to 425°F and line a baking sheet with foil.
- Halve the bell pepper, remove the stem and seeds, and slice it into 1/4 inch strips.
- Slice the halloumi lengthwise into 6 even slabs.
- Toss 1 tablespoon of oil with the bell peppers, sliced onion, and spice blend on one side of the baking sheet. Season with salt to taste.
- Arrange the halloumi on the other side of the baking sheet.
- Bake for 15-20 minutes, or until the peppers and onions are tender and the halloumi is golden and soft.
- Lay the tortillas on a clean work surface.
- Evenly distribute the roasted vegetables and halloumi down the center of each tortilla.
- Roll each tortilla into a tube.
- Heat 1 tablespoon of oil in a large non-stick skillet over medium heat.
- Once warmed, place the flautas in the skillet seam-side down and cook for 2-3 minutes without turning until they start to turn golden.
- Flip the flautas and cook for an additional 4-5 minutes, turning occasionally, until they are golden and crispy on all sides.
- Serve the flautas with a side of salsa and your favorite dressing.
