Bok Choy Mushroom Stir Fry

Bok choy, as one of the most popular and healthy dark green leafy vegetables in the common Chinese kitchen. Bok Choy Mushroom With Oyster Sauce stir fry is easy and quick recipe goes perfectly when eaten with white rice. Recently tried this dish at a restaurant, so thought to make it at home. What’s amazing is that it can easily be recreated at home! My husband & I like the bok choy to be bite sized pieces and the stems to be softer. So, I prefer separating the stems from the leaves which then cooked seperately. One of my go-to veggies that’s really versatile to cook with is Bok Choy, which is Chinese white cabbage. I love to prepare the dish by pairing it with mushrooms.

The combination of tender mushrooms and crisp bok choy are brought together with Oyster sauce, which is just a match made in heaven. This dish is utterly comforting and satisfying. Serve it as a side or a main course over steamed rice.
You can use fresh shiitake mushrooms but fresh shiitakes are quite expensive and sometimes hard to find. So you can add regular mushroom which is available locally.
This dish is meatless and vegan because I have used vegetarian Oyster sauce (available in Asian groceries) which is made with oyster mushrooms rather than real oysters. If you want to transform this dish then use oyster sauce which is made with real oysters and ditch the vegetarian oyster sauce.
It is a healthy, savory, and delicious side dish. Such a simple recipe & it hits the spot every time.
Bok Choy Mushroom Stir Fry

Ingredients
- 1 bok choy
- 4 shiitake mushrooms
- 3 cloves garlic
- 2 tbsp oyster sauce
- 1/2 tbsp sugar
- 1 tsp Sesame oil
- 3 tbsp water
- 1 tbsp cooking oil
Instructions
- Cut off the bottom of the bok choy and rinse the bok choy. Slice the mushrooms and garlic.
- Add 1 tbsp of oil to a wok and once it’s hot, sauté garlic over medium low heat for 30 seconds.
- Add mushrooms and stir fry for 3-4 minutes before adding the bok choy stem.
- Stir fry for another 2 minutes then add oyster sauce, water and sugar. Stir well for a minute.
- Add the bok choy leaves and stir fry for another 30 seconds and turn off heat.
- Serve with rice and drizzle sesame oil over the bok choy mushroom stir fry. Enjoy!
Tips
- Since oyster sauce contains salt, I don't add extra salt but you can adjust the salt in stir fry sauce accordingly.
- Don’t stir fry for too long once the leafy part is added.
- Don't overcook the dish at all.
- In this recipe I have used shiitake mushrooms but you can use any mushroom.
