Peanut Butter Dates are the perfect little sweet snack! They are super easy to make with just 3 ingredients– medjool dates, peanut butter and dark chocolate.

I don’t really love dates on their own, but when I started eating dates and peanut butter together, it was a total game changer! Sometimes I just dip a date straight into creamy peanut butter and call it a day, but I also like prepping some peanut butter stuffed dates so I can eat them on the go with less mess! These are made with just 3 ingredients and can be put together in about 10 minutes! Let’s make them!

These stuffed dates are so good, you will think you are eating candy! They really are a great alternative to a candy bar. You will be amazed at how delicious these are.

Naturally sweet! Chocolate of course, may be sweetened with sugar but when you use a super dark kind, there really isn’t much.

Easy to make. These are quick to assemble and anyone can make them!

No-cook/bake. Perfect for summer when you need a sweet treat but don’t want to turn your oven on.

Perfect on-the-go snack. These peanut butter dates are a small, portable snack that pack a lot of nutrition.


Ingredients

Peanut Butter Dates

  • Medjool dates (affiliate link) – Noor Deglet dates are also very common and easy to find in stores, but I recommend medjool here since they are larger and easier to stuff.
  • Peanut butter – I like to use a natural kind with no sugar added. Dates are already sweet and paired with a no-sugar peanut butter, it’s the perfect balance. You can also swap peanut butter with any nut butter or tahini.
  • Dark chocolate – I also like to go super dark here with the chocolate, but you can use any chocolate you like
  • Optional toppings: the sky is the limit here. I added toasted coconut, but you can add chopped nuts, flaky salt, sprinkles, etc!


How to make peanut butter dates

*Before you begin, line a baking sheet with parchment to place the stuffed dates on as you go.


Remove the date pit

If you buy whole medjool dates, you will need to remove the pits.

Use a paring knife to cut a slit down the center of the date and remove the pit. The pit will come out very easily!

Stuff dates with peanut butter

Fill each date with about a teaspoon of peanut butter. I love Laura Scudders (affiliate link) peanut butter. It’s made with just peanuts and has the best flavor, in my opinion. It’s also easy to drizzle into the center of the dates because of its thinner consistency. But use whatever peanut butter you prefer!


Drizzle with melted chocolate

I use my favorite dark chocolate from Trader Joe’s (their Dark Chocolate Lovers Bar), but you can use chocolate chips or any other chocolate bar you like.

Melt the chocolate in the microwave for 30 second intervals until smooth. Then drizzle over all the dates. you can also dip the peanut butter dates into the chocolate if you like!

Add extra toppings

This is optional, but have fun with it. I added some toasted coconut and it was perfect!


Chill

Place your dates in the freezer for 1 hour to set the chocolate.


Storage

Once chilled, store the stuffed dates in the fridge for up to one week (and they probably won’t last that long!) I like to place mine in a glass storage container (affiliate link). You can also freeze these for up to 3 months. Just place them in the fridge the night before you plan to enjoy them or let them set at room temperature for about 30 minutes to soften up.

Ingredients

  • 10 whole medjool dates
  • 1/4 cup peanut butter
  • 2 oz dark chocolate
Instructions

Line a small baking sheet with parchment.
Remove date pits by cutting a slit down the center. The pit will pop out easily. Place pitted dates on the baking sheet.
Add about 1 teaspoon of peanut butter to each date.
Melt dark chocolate (if using a chocolate bar, roughly chop the chocolate first), in the microwave for 30 second intervals until melted.
Drizzle the chocolate over the dates.
Top with any desired extra toppings, like toasted coconut, sprinkles, flakey salt, chopped nuts.
Place in the freezer for 1 hour to set. Then transfer to the fridge to store. Store in an airtight storage container or ziploc bag in the fridge for up to one week. You can store in the freezer for up to 3 months. Just place in fridge the night before you plan to enjoy or let sit at room temperature for 30 minutes.

    Wow, these are wonderful. Made a batch and took to a bbq of "date haters" and won them over BIG TIME!! Next will make with Almond butter and sliced almonds (toasted) and chocolate. Your correct in that there are no limits to what you can put with the dates! Thank you. ( also took frozen to golf and shared once they softened! Fanatastic!
