Ingredients and Substitutions

This white chocolate Easter dessert comes together with simple ingredients for the perfect sweet-crunchy bite! Scroll to the recipe card at the end of this post for the full recipe with ingredient amounts.

All ingredients for Easter Bunny Bait laid out on a countertop, including Chex cereal, popped popcorn, Bunny Grahams, M&Ms, white candy melts, Easter sprinkles, and shredded coconut.
  • Chex cereal: I love Rice Chex or any plain variety for a light base. If we're all out, even honey nut Cheerios will do.
  • Popped popcorn: Adds crunch. Lightly salted popcorn is great to balance the sweetness too.
  • Bunny Grahams: I love Auntie Anne’s, but use your favorite brand. Chopped graham crackers work as well.
  • Easter M&Ms: These are seasonal, pastel m&m candies you can probably find at your local grocery store.
  • Vanilla candy melts: They add creaminess and help create small clusters. Feel free to use white chocolate chips.
  • Easter sprinkles: I use regular, pastel-colored sprinkles if I’m all out of specialty ones.
  • Sweetened coconut shreds: Raw shredded coconut is more on-theme, but toasted shredded coconut is full of aroma and crunch. Use whichever you prefer.

How to Make Easter Bunny Bait

This chocolatey, Easter bunny bait recipe is a quick, no-bake snack that might just bring the Easter bunny to your kitchen this year! Here’s a quick rundown of the recipe:

A bowl of white candy melts being melted in the microwave until smooth.
  1. Step 1: Melt the white candy melts according to package directions until smooth.
A large mixing bowl filled with Chex cereal, popcorn, Bunny Grahams, and colorful M&Ms being gently tossed together.

2. Step 2: In a large bowl, combine the Chex cereal, popcorn, Bunny Grahams, and M&Ms. Toss gently until evenly mixed.

Melted white chocolate being drizzled over the snack mix and gently folded in with a spatula.

3. Step 3: Drizzle the melted white chocolate over the snack mix and use a spatula to fold it in, coating the ingredients lightly and unevenly.

Snack mix spread on a parchment-lined baking sheet, topped with pastel Easter sprinkles and coconut, setting at room temperature before breaking into clusters.

4. Step 4: Spread the mixture in an even layer on the prepared baking sheet. While the chocolate is still soft, sprinkle with Easter sprinkles and coconut. Let sit at room temperature for 20–30 minutes, or until the chocolate is fully hardened. Break into clusters and serve.

Variations

This colorful Easter trail mix is super fun to customize depending on what candies you’ve got on hand and what time of year it is! Try these yummy twists:

More candy: Reduce the M&M’s by half, and add ½ cup jelly beans or Cadbury mini eggs. You can even do ¼ cup of each.

Swap the chocolate: If you’re not a fan of white chocolate, feel free to use milk, semi-sweet, or dark chocolate chips instead of vanilla candy melts.

Add peanut butter: Stir 2-3 tablespoons smooth or crunchy peanut butter into the melted chocolate for a nutty twist.

Make it sweet-salty: Toss ¼-1/2 cup mini pretzels or chopped pretzel sticks with the rest of the cereal mixture for a salty crunch.

St. Patrick’s day mix: Mix 1-2 drops green food coloring into the melted chocolate until smooth. Use green mini M&M’s and golden sprinkles for a leprechaun-inspired treat.

Valentine’s Day mix: Mix 1-2 drops pink or red food coloring into the melted chocolate until smooth. Use Valentine’s M&M’s and red sprinkles.

Top Tips for Easter Bunny Bait

These simple tips and tricks will make your Easter bunny bait perfect every single time:

Use the microwave method: You can melt most chocolate chips and candy melts using my microwave method. Place them in a heat-safe bowl and microwave in 15-20-second intervals, stirring between each one until smooth.

Allow the chocolate to cool: Don’t pour the chocolate over the cereal mixture immediately after melting because the M&m’s can bleed their color and it won’t look as pretty. Always let the melted chocolate cool for at least 2-3 minutes before pouring it in.

Break it by hand: Doing so creates rustic, fun clusters. My daughter loves helping with this!

Toss gently: Mix everything until just coated. Keeping it a little uneven gives better texture and prevents crushing the popcorn.

Ingredients

  • 3 cups Chex cereal
  • 3 cups popped popcorn
  • 1 1/2 cups Bunny Grahams
  • 1 cup Easter M&Ms
  • 10 oz vanilla candy melts/ white candy melts/ vanilla almond bark
  • 2 tablespoons Easter-themed sprinkles
  • 1/4 cup sweetened coconut shreds or flakes
Instructions

Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, combine the Chex cereal, popcorn, Bunny Grahams, and M&Ms. Gently toss until evenly mixed.
Melt the white chocolate according to package directions until smooth. I melted in the microwave for 30-40 seconds in a microwave safe bowl.
Drizzle the melted white candy melts over the snack mix. Using a spatula, gently fold until the mixture is lightly and unevenly coated.
Spread the coated mixture into an even layer on the prepared baking sheet.
Immediately sprinkle the top with Easter sprinkles and coconut before the chocolate sets.
Let the Bunny Bait sit at room temperature for 20–30 minutes, or until the chocolate is fully hardened. Break into clusters and serve.
Tips
  • 1. Use good-quality white chocolate or vanilla almond bark for smooth melting and easy coating. If using chips, melt slowly to avoid seizing.
  • 2. Gently toss the mix just until coated. Keeping it a little uneven gives better texture and prevents crushing the popcorn.
  • 3. Sprinkle the Easter sprinkles and coconut on top after spreading on the baking sheet so they stick and stay colorful.
  • 4. Lightly salted popcorn balances the sweetness, but plain popcorn works fine too.
  • 5. Store in an airtight container at room temperature for up to 5 days, away from heat or sunlight.
  • 6. For longer storage, refrigerate up to 7 days and bring to room temperature before serving for the best texture.
