We've seen rice cakes replace toast and bagels, but have you seen them in pizza form? These are my new favorite snack! Seriously, I don't know if I will ever get over how quick and easy they are to make.


They can be placed in the microwave, oven, or my preference - the air fryer. All you need are rice cakes, pizza sauce, cheese, and any other preferred toppings. I added mini pepperonis, pesto, and some Italian seasoning. Within 5 minutes, you have a healthy, low-cal, yet delicious, mini pizza!

Ingredients

  • 2 rice cakes
  • 2 tbsp pizza or tomato sauce
  • 1/4 cup shredded mozzarella or other cheese
  • Mini pepperonis (optional)
  • 1 tbsp pesto (optional)
  • Italian seasoning to taste (optional)
Instructions

Divide the pizza sauce onto the rice cakes
Add the cheese and pepperoni if you are adding both
Place in the air fryer at 350F for approximately 2 minutes or until cheese melts
Add pesto and sprinkle with Italian seasoning
