We've seen rice cakes replace toast and bagels, but have you seen them in pizza form? These are my new favorite snack! Seriously, I don't know if I will ever get over how quick and easy they are to make.
They can be placed in the microwave, oven, or my preference - the air fryer. All you need are rice cakes, pizza sauce, cheese, and any other preferred toppings. I added mini pepperonis, pesto, and some Italian seasoning. Within 5 minutes, you have a healthy, low-cal, yet delicious, mini pizza!

Ingredients
- 2 rice cakes
- 2 tbsp pizza or tomato sauce
- 1/4 cup shredded mozzarella or other cheese
- Mini pepperonis (optional)
- 1 tbsp pesto (optional)
- Italian seasoning to taste (optional)
Instructions
- Divide the pizza sauce onto the rice cakes
- Add the cheese and pepperoni if you are adding both
- Place in the air fryer at 350F for approximately 2 minutes or until cheese melts
- Add pesto and sprinkle with Italian seasoning
- Enjoy!
