French Toast With Sweet Whipped Cottage Cheese & Caramelized Banana

Man oh man is this French toast delicious! If you are trying to still eat the things you love but increase your protein intake making small changes - this is the recipe for you. This simple 5-ingredient French toast is elevated by adding some quickly caramelized bananas and a whipped cottage cheese spread. In the past I've used ricotta cheese, but substituting it for cottage cheese ups the protein intake without compromising any of the flavor.
I used gluten-free bread for this recipe, but you can use any loaf of sliced bread for this recipe.

Ingredients
For the French Toast
- 6 slices of bread
- 2 eggs
- 1/2 tbsp vanilla
- 1/2 tbsp cinnamon
- 1/2 cup milk of choice
- Butter for frying
- Syrup of serving
For the Whipped Cottage Cheese & Caramelized Bananas
- 1 cup cottage cheese
- 2 tbsp honey, divided
- 1/2 tbsp cinnamon, divided
- 1/4 cup milk of choice
- 1 banana, sliced
Instructions
For the French Toast
- Heat butter in a pan
- Combine the eggs, vanilla, cinnamon, and milk in a bowl or flat deep dish using a whisk
- Dip each piece of bread into the mixture and place on the heated pan (you should be able to fit at least 2 pieces at a time depending on the size of your pan)
- Let the slices pan fry for approximately 4 minutes per side, until golden brown
- Continue through the rest of the slices, wiping the pan in between batches and adding more butter as needed until complete
For the Whipped Cottage Cheese & Caramelized Bananas
- For the whipped cottage cheese, combine your cottage cheese, honey, 1/4 tbsp cinnamon, and milk of choice into a food processor or blender until combined. Adjust according to preferred taste and consistency.
- For the caramelized bananas, heat 1 tbsp of honey and 1/4 tbsp cinnamon in a pan on low heat until the honey melts then add one sliced banana
- Let the bananas fry for approximately 5 minutes then flip
- Assemble your french toast slices and top them with honey, whipped cottage cheese, and maple syrup
Tips
- Double the recipe for a full loaf of bread
