Thai Inspired Sweetcorn Fritters

This quick Thai Flavour sweetcorn fritters are on of my favourite work from home lunches at the moment! Simply whiz up most of the ingredients in a blender, then spoon into the pan and it’s ready in not much more than 5 minutes! I used panang paste since it’s what I have open at the moment, but red Thai curry paste would work the same! Instead of deep frying the fritters, these are cooked with a little bit of oil in a non stick frying pan for a lighter alternative Omit the fish sauce for a veggie version. I love them with a drizzle of lime and dipping them into sweet chilli sauce!

Ingredients
- 1 Cup / 1 Can of Sweetcorn, drained (around 280g grams)
- 2 eggs
- 2/3 All Purpose Flour (100g Plain Flour)
- 1 TBSP Panang Paste
- 1 TBSP Fish Sauce
- Spring Onion, chopped (optional)
Instructions
- Put 2/3 of sweetcorn and all of the other ingredients in a blender and pulse to a paste, then stir in the rest of sweetcorn kernels
- Put a frying pan on a medium heat and cover the bottom with a neutral tasting oil. Spoon the batter into roughly 8cm circles in the frying pan, then leave for 2-3 minutes until golden, before flipping and cooking the other side.
- Serve immediately with some dipping sauce!
