Ingredients
- 2 eggs
- 1/2 head of broccoli
- 50g peas
- Fresh mint
- 2 garlic cloves
- Paprika, oregano (optional)
- Salt & pepper to taste
- Optional: Extra spices, fresh mint on top, and a drizzle of chili sauce for extra kick!
Instructions
- 1. Add peas, raw broccoli, mint, garlic, and spices to a food processor and pulse until well combined.
- 2. Separate the egg whites from the yolks. Add the egg whites to the veggie mixture and stir.
- 3. Heat a pan (I used my @hexclad hybrid pan), use half of the mixture to create a rounded shape, and use a spoon to make a small hole in the centre.
- 4. Carefully place the egg yolk into the hole.
- 5. Cover with a lid and cook for 10-15 minutes until cooked through.
- These egg cakes are a fun, veggie-filled way to start your day and stick to your goals—while keeping meals exciting for your whole family! 🥰
