Amish Baked Oatmeal

I've been baking all of the oats over here in my little kitchen, but no one is complaining.
Both my husband, and my 16mo son enthusiastically approve and could down an entire batch at one sitting if I didn’t sneak in a bite here and there 😁.
I came across this needle of a recipe in the haystack of @pinterest by @foodlovinfamily. I made a few changes (as I do 🤪). I added 1/2 C of raisins & 1/2 C of pecans. I feel like the flavor and texture of both added a lot. Also, the 2nd time I made it I was out of brown sugar, so I used coconut sugar, and it was still really good.
One of the things I like about baked oatmeal is that it reheats so well. I usually refrigerate or freeze a few portions to pull our for a quick breakfast or snack for my son (or husband, who’s just as big a fan).

Amish Baked Oatmeal
Recipe details
Ingredients
- 1/2 cup brown sugar
- 1/2 tablespoon baking powder
- 1/2 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 1/4 teaspoons salt
- 2 eggs
- 1/4 cup butter, melted
- 1 1/4 cup milk
- 3 cups old fashioned oats
- 1/2 C chopped pecans
- 1/2 C raisins
Topping
- 1/2 tsp cinnamon
- 1 Tbs white sugar
Instructions
- Preheat over to 350 degrees F.
- Spray 8 x 8 baking dish with non-stick cooking spray.
- In a large bowl, whisk together brown sugar and eggs until combined.
- Stir in baking powder, vanilla, 2 teaspoons cinnamon, and salt.
- Stir in melted butter and milk.
- Stir in oats, raisins, and pecans until combined. Spread mixture in baking dish.
- Combine granulated sugar and 1/2 teaspoon cinnamon. Sprinkle over top of oatmeal.
- Bake for 30-35 minutes. Let cool slightly before serving.
Tips
- I've used coconut sugar instead of brown sugar for a lower glycemic index (and I didn't have brown sugar, and it tasted just as good).

I had a recipe for maple cream and made it tonight to serve with these oatmeal bars for breakfast tomorrow!
What about adding fruits , berries and such? Will that work
