Pumpkin Spice Overnight Oats

These pumpkin spice overnight oats are so simple to make. It's rich and creamy, so they taste like a pumpkin pie pudding. They are perfect for meal prep because they last up to 5 days in the fridge.
Mornings are rough, so I like to meal prep. You can make several jars of pumpkin overnight oatmeal on the weekend and eat them all week. These overnight oats are meant to be eaten cold. I think they taste more like a creamy pudding than oatmeal.
Use old-fashioned oats to make overnight oats. Quick oats get too mushy, and steel cut are too firm. I use Greek yogurt, but you can use coconut yogurt for vegan overnight oats. Learn more about the ingredients in my pumpkin spice overnight oats recipe.
I make my overnight oats in a 8 ounce mason jar. Then I can add a lid and keep them in the fridge for the rest of the week.

Ingredients
- 1/2 cup Greek Yogurt
- 1/2 cup pumpkin puree
- 1/4 cup oats
- 1/4 teaspoon pumpkin pie spice
- 1 tablespoon chia seeds
- 1 tablespoon pure maple syrup
Instructions
- Combine all ingredients in a pint sized mason jar or bowl.
- Stir well. Put a lid on your mason jar or cover in a bowl and put in the fridge.
- Let sit for 4 hours or up to 4-5 days.

I'm going to try this. I think it would make a great snack. Something healthy to comfort the soul of a type one diabetic.
