Buffalo Chicken Deviled Eggs

I know that eggs are expensive at the moment, but it doesn’t change the fact that I love them,, fried, scrambled, on top of a burger, and of course hard boiled. I also love, buffalo chicken and the marriage of buffalo chicken and deviled eggs was a match made in heaven!

I could eat more of these than it is acceptable, but for this recipe, I’m just going to show you how to make two of them which is the perfect snack or addition to a salad.

I used extra large eggs for this recipe, if you don’t have hard boiled eggs already on hand start by boiling two eggs for seven minutes turn off the heat and let them sit for two minutes, then run under cold water until they are cool enough to peel. This is a method that has worked for me if you have a method that works for you prepare your eggs that way. take the two hard boiled eggs and Cut a slight amount off of the tapered end of each of them so that they can stand up on their own as shown in the picture.

then cut off the top of the eggs and scoop out the yolk into a bowl


For the filling, mash the two yolks, add 2 tablespoons of plainGreek yogurt, a half of an avocado diced, 1/3 of a cup, diced cooked chicken and 2 tablespoons minced celery, mix that all together until incorporated

Now it’s time to add the buffalo sauce I like things spicy so I added 3 tablespoons of buffalo sauce you can add more or less to your liking, and this item is optional, but I also added a tablespoon of dill pickle relish, and mixed this all together

Stuff, the eggs piled as high as you can with this mixture, and you may have leftovers for you to eat right out of the bowl, and you won’t be sad the filling is delicious, also feel free to drizzle more buffalo sauce on top

Ingredients
To prepare the eggs
  • Boil two extra large eggs for seven minutes then turn off the heat. Let them sit for two minutes and then run them under cold water until they are cooled.
  • Peel the eggs
  • Cut off a small amount off of the tapered end of the eggs so that they stand on their own
  • Then cut off the top of the egg and scoop out the yolks into a bowl
Instructions
For the filling
mash the two yolks

add buffalo sauce to your liking, I added 3 tablespoons
And if you like, add one tablespoon of dill relish
To prepare eggs
Stuff each egg with as much filling as you can get into them and enjoy!
