Crunchy Tahini Mediterranean Salad

Hello my salad lovers!
We are back to making easy, healthy and nutritious salads. The key to healthy recipes is t choose fresh ingredients and tasty dressings.
Salads are a great way to start healthy eating habits and incorporate a variety of vegetables and sometimes fruits, to create a nourishing bowl of goodness. For this Mediterranean Veggie bowl, I used my fave ingredients like: garbanzo, onions, cucumbers, feta and for a crunch pistachios. The simple lemon tahini dressings binds all the ingredients together to a perfect flavorful bomb on each bite. Not only it is so good but comes together in only 15 minutes. and just like that this how you Dishplay it and ELEVATE home cooked meals!
You can easy prep in advance and store for a couple days. in the fridge. Great for meal prepping ideas or the side kick for grilled fish, falafels or chicken.
Simple fresh ingredients.
Adding dry or fresh mint is a flavorful herby addition to this recipe.
Chickpeas are a great source of protein to keep this nutritious salad, flavorful and healthy.

Crunchy Tahini Mediterranean Salad
Recipe details
Ingredients
- 1 cup of chickpeas
- 1/2 cup of cubed seedless cucumber
- 1/3 cup of chopped red onion
- 1/4 cup of green olives
- 1/4 cup of feta cheese crumbled
- 1/4 cup of chopped pistachios
- 1 tsp of AFIA Dried mint or fresh mint
- 1 Tbsp of fresh dill
- 2 Tbsp of Lemon Tahini dressing
- Tahini Dressing
- ¼ cup of tahini
- 3 tablespoons water, plus more if needed
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of maple syrup
- 1 small garlic clove grated
- ¼ teaspoon sea salt
Instructions
- In a small bowl whisk all the ingredients for the tahini dressings and set aside.
- In a salad bowl combine drained chickpeas, chopped red onions, chopped olives, cucumber, feta cheese, chopped pistachios, dill, dry mint and two tablespoons of the lemon tahini dressings.
- Combine all together and ENJOY!
Tips
- Added ingredients can also chopped tomatoes or fresh falafels.
