Malibu Jello Shots

My blue raspberry Malibu Jello shots are sweet, tropical, and SO easy to make. They taste like you're on vacation and are perfect for parties.
I love making fun tropical drinks like the blue Hawaiian, blue margaritas, and pina coladas. However, for parties there's no better drink than these Malibu Jello shots. The recipe makes a bunch and is always a crowd favorite. We like to tip them back straight out the cup, but you can also unmold them. Serving in the cup with a mini spoon is also super cute.
- Jello: I used Starburst Blue Raspberry gelatin found at Walmart. If you can't find it Jello Berry Blue will work. Or feel free to use your favorite flavor like strawberry, pineapple, or even watermelon!
- Rum: I used Malibu rum which has a sweet coconut flavor. Be sure it is chilled to help the Jello set up properly. You could also use regular rum, pineapple rum, blue raspberry vodka, or even Whiskey like I do in my Fireball Jello shots.
- Don't be tempted to add extra to make your shots boozier. Too much alcohol will prevent them from setting up properly.
- Pineapple: Pineapple contains an enzyme that breaks down gelatin and prevents it from setting. Be sure to use it as a garnish only after it has already set. Or opt for canned pineapple which breaks the enzyme down with heat during the canning process.
- Easy Removal: If you want to remove them from the cups I suggest spraying the cups lightly with nonstick cooking spray before filling and running a knife around the edge just before removal.
- Test Kitchen Tips: We've tested a lot of these! To minimize mess I suggest pouring into the containers using a measuring cup with a spout. Then I put all my cups on a sheet pan to easily move them to the fridge.

Ingredients
- ▢ 3 Ounce Box Blue Raspberry Jello
- ▢ 1 Cup Water
- ▢ 1 Cup Cold Coconut Rum I Used Malibu
- ▢ Whipped Cream, Cherries and Pineapple For Garnish, If Desired
Instructions
- Bring one cup of water to a boil. I like heating the water in my glass measuring cup in the microwave for 2-3 minutes.
- Whisk in blueberry Jello until dissolved. Pour in chilled rum.
- Pour into 2 ounce condiment cups and refrigerate for 3-4 hours.
- Garnish with pineapple or cherries and enjoy responsibly.
