    • 1/2 cup red bell pepper finely chopped

    • 1/4 cup fresh cilantro chopped
    • 1/2 teaspoon salt

    Drain and rinse the corn and black beans thoroughly under cold water. Let them sit in a strainer for a few minutes to remove excess moisture.

    Add red pepper flakes, and ground cumin. Drizzle the olive oil and squeeze in the lime juice. Add salt and black pepper to taste.

    Let the dip sit in the refrigerator for 30 minutes to allow the flavors to meld.
