I am allll about the easy dinners this days but never want to skimp on flavour.
Enter is delicious meal idea - zucchini pasta bake!
It's super quick to prepare, super tasty and makes a big batch so perfect for left overs. If you are looking for a low carb meal (if that is your thing!), this recipe will fit the bill.
This recipe can be broken down to 3 parts; chopping your zucchini, preparing your sauce and shredding your cheese. That's it! This dinner really hits the spot. Serve it up with a side salad or some crusty bread for a quick weeknight meal. YUM.
Zucchini Pasta Bake

Ingredients
- 4 large zucchini, chopped in 1 inch slices (about 6 cups total)
- 1 Tbsp oil
- 1 tsp each; salt, pepper, garlic powder
- 1 lb lean ground beef
- 1/2 white onion, diced
- 2 cloves garlic, minced
- 1 jar your favourite pasta sauce (about 500 ml is needed)
- 2 cups shredded cheese
Instructions
- Preheat oven to 375 degrees.
- In a 9 X 13 baking dish, place chopped zucchini. Drizzle with 1 tablespoon for olive oil and sprinkle with salt, pepper and garlic powder. Use tongs to coat zucchini and set aside.
- In a large frying pan, brown ground beef over medium high heat until browned. Drain off fat and place back into the pan.
- Next, add in onion and garlic to the ground beef. Sautee until tender, about 5-6 minutes.
- To the ground beef mixture, add in pasta sauce. Stir to combine and heat through over medium high heat.
- Once the sauce is hot, pour over the prepared zucchini. Give everything a stir.
- Top with shredded cheese.
- Bake uncovered for 15 minutes then broil on LOW for 3-4 minutes until cheese is golden brown and bubbling.
- Remove from the oven and serve hot. Enjoy!

I wish the recipe would be more specific - 4 large zucchini isn’t a big help. I have seen some really large zucchini’s.
