Vic’s Tricks To…Zucchini Parm Fries
I’m obsessed with French Fries.
Seriously, probably my favorite food, but hands-down best side there is.
I really love all potatoes. Mashed potatoes, baked potatoes, scalloped potatoes, tater tots, even freakin gnocchi!
But, if I want to prevent myself from looking like a potato, then I needed to find an alternative.
ENTER: ZUCCHINI FRIES
Zucchini is literally the best. Super low cal/low carb and can be morphed in so many ways. Substitute pasta with zoodles in any recipe and it will be delicious and nutritious!
There are a few ways you can prepare these delicious beauties, but you know me…
I’m lazy.
So, I figured out a way to make this as easy as possible.
Cut your zucchini into fry shape. Doesn’t really matter the shape, it’s more important that they’re all uniform in size, so they finish cooking at the same time.
Throw them in a bowl and drizzle some olive oil and toss with parmesan cheese. Use enough parmesan cheese to coat the zucchini completely.
Don’t be shy, sprinkle that cheese!
Then lay them all onto a baking sheet lined with parchment and spread them out so they do not touch.
Vic Trick: It’s important that the pieces aren’t touching when they go into the oven or else they will steam instead of bake.
Place them in a 450° oven for about 15-20 minutes or until they’re nice and browned and crispy. These can also totally be done in an air fryer!
And just like that, you’re done! Enjoy straight up or dip em in some ranch and enjoy!

Ingredients
- 3 medium zucchinis
- 1 tbsp olive oil
- 1/4 cup grated parmesan
Instructions
- Preheat oven to 450°
- Cut zucchini into fry shape and place into a bowl
- Toss with olive oil and parmesan and spread onto a parchment lined baking sheet – make sure the fries are not touching
- Cook for 15-20 minutes or until golden brown and crispy
- Enjoy!
