The traditional sweet potato casserole can pack an average of 230 calories, 10g of fat and 18g of sugar in just 1/2 cup serving, which is why I set out to create a healthier version of this popular southern holiday side dish
These roasted sweet potatoes are topped with fresh herbs, parmesan cheese and honey giving them a sweet and savory flavor, and the toasted pecans give them a satisfying crunch. They provide only 134 calories, 8g of fat, and 8g of sugar per serving making them a healthier dish for you and your family.

Holiday Honey Roasted Sweet Potatoes

Ingredients
- 2 Medium Sweet potatoes
- 2 tbsp. olive oil
- 2 tbsp. chopped thyme and/or rosemary
- 2 tbsp. honey plus 1 tbsp. for garnish if desired
- 2 tbsp. grated parmesan cheese
- 1 tsp. pepper
- 1/4 cup toasted chopped pecans
Instructions
- Preheat oven to 425 degrees
- Peel and slice sweet potatoes into 1/4 thick slices, and place on non-stick cooking sheet.
- Whisk olive oil with honey, thyme and/or rosemary, and pepper.
- Brush sweet potatoes with olive oil/honey dressing.
- Sprinkle parmesan cheese on sweet potatoes
- Bake for 20min
- Sprinkle with roasted pecans and extra honey if desired
