Sweet & Spicy Roasted Carrots and Whipped Tofu

This is one of my favorite "two-for-one" recipes because not only do you have delicious roasted carrots in a sweet and spicy glaze, but the whipped tofu can stand alone as a tasty dip for other veggies, chips, and more! If you just like roasted carrots, great! They make a lovely topping for rice, mixed into grain bowls, or even just eaten on their own. (I will fully admit several carrot slices wind up in mouth before they've even cooled on the baking sheet. 😆)


The carrots are roasted until tender and wonderful when served over the whipped tofu as a side dish or appetizer.


Maple syrup infuses the carrots with a little extra sweet flavor, and red pepper flakes give them a little kick.


The whipped tofu has a luxurious texture and tangy flavor.


Even if you're not vegan, you won't be able to tell this dish is made without dairy (and gluten, for those following a gluten-free diet).


Customize this dish with other seasonings, try cutting the carrots lengthwise instead of in medallions, and experiment with other veggies. You can get as creative as you'd like!

Ingredients
Sweet & Spicy Roasted Carrots
  • 1 pound carrots
  • 1 tablespoon olive oil
  • 1 teaspoon pure maple syrup
  • 1/2 teaspoon red pepper flakes (while optional, this is what gives your carrots a kick!)
  • 1/2 teaspoon kosher salt
  • pinch of black pepper
Whipped Tofu
  • 7 ounces firm tofu
  • 2 tablespoons vegan mayo
  • 2 tablespoons lemon juice (approx. one lemon)
  • 1 tablespoon lemon zest (approx. one lemon)
  • 1 1/2 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic
  • 1/2 teaspoon kosher salt
Instructions
For the carrots
Preheat oven to 425 degrees Fahrenheit.
Remove carrot tops and tip, slicing diagonally to create medallions. Aim for a consistent size across the carrot slices. There's no need to peel carrots for this recipe.
In a bowl, whisk together the olive oil, maple syrup, red pepper flakes, salt, and black pepper.
Add the carrots and toss in the sauce.
Place carrots on a parchment-lined baking sheet in an even layer and bake for about 20 minutes, or until fork tender.
Whipped Tofu
Loosely break tofu into large chunks in the bowl of your food processor.
Add the rest of the whipped tofu ingredients.
Process for up to a minute before tasting and making adjustments, if desired.
Spread whipped tofu on serving dish before topping with the carrots.
