Green Bean Casserole With a Twist
I get it, green bean casserole can be boring, I mean a can of soup and frozen green beans how good can it be? This recipe is made with fresh green beans roux made with flour and butter and topped with onion rings, yes, onion rings! How could this recipe not be a winner?
I do add a few of the good ole dried onions for flavor but the big crispy onion rings on top really make this side dish!
Start by trimming and boiling 1 pound of green beans, I only cooked them halfway so there’s still a little snappy because they will also cook in the oven
Removed from stove, let them cool a bit then I slice them into thirds so they’re more like bite-size
Dice up a 10 ounce package of mushrooms
Melt 4 tablespoons of butter in a fry pan and sauté the mushrooms with 1 tablespoon of minced garlic for about 3 minutes
Add 2 tablespoons of butter to the pan and melt
Once melted, at 1/4 of a cup of flour to the pan
And 3 cups of milk
at this point, you can add salt and pepper to taste. I add a half a teaspoon of each, and also a scant dusting of Cayenne pepper.
Cook and stir that mixture until bubbly and thickening approximately five minutes
Remove from heat and add one cup shredded white cheddar cheese And mix in
Add in the green beans and mix in
Place the mixture in your casserole dish and if you want to use the dried onions as well, you can sprinkle 3/4 of a cup over the mixture as I did here
These are the onion rings that I use. They are from the frozen section. Any brand will work. It’s a 13 ounce bag.
Place them all over your casserole, so it is topped in covering all of the green bean mixture as best you can
Cooking preheated 375° oven for 30 to 40 minutes or until bubbly, I also placed the broiler on for one minute or so, and the onion rings will get crispy!

For the casserole
- 1 pound fresh green beans, trimmed and partially cooked al dente
- 110 ounce package of mushrooms, diced
- 1 tablespoon minced garlic
- 4 tablespoons butter
- 2 tablespoons of butter
- 1/4 of a cup flour
- One cup, shredded white cheddar cheese
- 3/4 of a cup dried french fried onion rings (optional)
- 113 ounce bag, frozen onion rings
Instructions
To prepare the casserole
- Preheat oven to 375 degrees
- melt 4 tablespoons of butter in a fry pan
- add the diced mushrooms and garlic and fry for 2 minutes
- mass 2 tablespoons butter to the pan, let it melt and add 1/4 cup of flour and 3 cups of milk
- mix and cook that mixture until bubbly and it starts to thicken
- remove from heat and add in 1 cup of shredded white cheddar cheese, mix in and add the green beans, mix all together
- add mixture to a casserole dish
- *optional* sprinkle with 3/4 cups dried onions
- top with frozen onion rings so the casserole is covered
- bake for 30-40 minutes until bubbling
- put broiler on for one minute or so, watching closely, just to crisp up the onion rings
