This easy salad full of protein is another simple go to of mine! I am currently in the process of moving and ingredients are sparse. Cooking while packing is not the most exciting as I am attempting to use up everything left in my fridge, while not making a mess over the stove or having to use my packed away dishes. So, this simple salad was the perfect solution for my situation!
I think once I have full access to my dishes and new kitchen, I will definitely remake it and add some extra protein - which will likely be chicken (my favorite!).

Simple Green Salad
Recipe details
Ingredients
- 1 romaine heart
- 2 eggs
- 1 sliced avocado
- 2 tbsp toasted pine nuts (sub any other nut/seed)
- crumbled feta to top
- green goddess dressing (store-bought)
- salt & pepper to taste
Instructions
- Bring a pot of water to a boil then boil eggs for 8-12 minutes depending on preference of yolk consistency
- Place eggs in an ice bath to stop from cooking, then peel and slice
- Combine all ingredients in a bowl and enjoy!
Tips
- Air fry the eggs at 250F for 10-16 minutes (depending on preference of yolk) instead of boiling

You are so right, sometimes all you need is simplicity.
This salad is something I can use as a go-to when I need a bite of something tasty, but don't want to fuss.

This is my favorite salad, I add sliced tomatoes and blue berries, balsamic vinegar extra vergine olive oil, lunch or dinner is a full meal for me
