Super tasty chicken that is ready in less than half an hour
Am I the only one who thinks that anything coated in balsamic vinegar has got to be delicious? I looove balsamic, I can’t think of anything more amazing than dipping fresh bread in it. That’s why I use it quite a lot in cooking and in dressings. The other day I was going to make my lemony chicken bites (check out my Instagram for the recipe) but realised I had run out of lemons. So I experimented a bit and this new recipe came about! Let me tell you, it’s so so tasty. Here it is if you want to test it out yourself!
Balsamic Chicken Bites

Ingredients
- 17.6 oz (4 cups) chicken breast cut into bite-sized pieces
- Plain flour
- 2 tbsp olive oil
- ¼ cup white wine
- 3 tbsp balsamic vinegar
- 3 tbsp water
- 2 rosemary sprigs, leaves picked, or 1 tbsp dried rosemary
- Extra balsamic to serve
Instructions
- Coat the chicken, cut into bite-sized pieces, with a dusting of flour.
- Heat a couple of tbsp of olive oil in a pan and brown the chicken on a medium heat, mixing often.
- Once the chicken has browned all over, add the white wine and quickly turn down the heat to low. Let the white wine evaporate whilst mixing (it will only take a few minutes).
- Add the balsamic vinegar and water and mix everything well, until all the chicken pieces are covered in the sauce. Add the rosemary leaves and then let it cook for about 10 minutes on a low heat, until the sauce has thickened up.
- Season to taste and serve with an extra drizzle of balsamic on top alongside some sweet potatoes (roasted, fried or mashed) and some boiled greens. Make sure you also have some bread at hand to soak up any extra balsamic.

I have, in the past, marinated chicken in Balsamic Vinegar or Italian dressing (oil and vinegar) and cooking in a fry pan. The result is a MOIST chicken, Very Tasty ! Thank you for putting my idea in writing !
