What are they loaded with you ask? VEGGIES! I packed these burgers full of grated zucchini and spinach. Oh and a bit of feta cheese too! These healthy burgers are packed with flavor and such a great meal prep recipe. You can also use this recipe to make chicken meatballs as a nice way to switch it up. I kept it simple and topped my burger with some garlic mayo and lettuce. You can substitute the cheese or use different veggies. This recipe is super versatile and I think I might add some red peppers to the mix next time too.

Ingredients
For the Patties
- ground chicken (454 grams)
- 1 egg
- 1 cup breadcrumbs
- 1/2 cup crumbled feta
- 2 cups chopped spinach
- 1 zucchini
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup diced red onion
For Serving
- burger buns
- lettuce
- garlic aioli
- other condiments of choice
Instructions
- Chop the spinach and dice the red onions
- Grate 1 zucchini and use a cheesecloth or towel to squeeze out excess liquid
- Combine all ingredients and form patties
- Air fry the patties at 380F for 10 minutes, then flip and cook for another 10-15 minutes (alternatively use BBQ, pan fry, or cook in oven)
- Top the burgers with your favorite condiments and enjoy!
