3 Cheese Keto Cauliflower Waffles
For a savory twist on the classic breakfast food, try these 3 Cheese Keto Cauliflower Waffles made with cauliflower rice, cheddar, mozzarella and parmesan (and a handful of other ingredients). Top it with a fried egg for the most perfect Low Carb brunch!
If you’re having weird reactions to this concept right now, you’re me 30 minutes before I decided to give these a shot.
And when I did, I finished them ALL in one meal! They were 4 square (3 normal round) waffles.
Well I love adding cauliflower to pancakes and oatmeal to bulk them up, but I never considered making such a breakfast food whose core ingredient is the vegetable itself!
The only thing that drew me in was all that cheese. But while most recipes use just the classic cheddar or mozzarella, I decided to take it one step further with 3 types!
3 Cheese Keto Cauliflower Waffles

Ingredients
- ½ medium Cauliflower Head (3 cups chopped, 321g)
- 2 Tbsp medium Onion, Chopped fine (20g)
- 2 Eggs
- ¼ cup Shredded Cheddar (28g)
- ¼ cup Shredded Mozzarella (28g)
- 3 Tbsp Grated Parmesan (15g)
- 3 Tbsp Almond Flour (or other, 15g)
- ¾ tsp Italian Seasoning or Oregano
- ½ tsp Garlic Powder
- ⅓ tsp Salt
- ¼ tsp Pepper
- Cooking Spray (for greasing)
- Parsley (for garnish)
Instructions
- Preheat and lightly grease waffle iron with cooking spray.
- Chop cauliflower into florets and pulse in a food processor and until finely ground into “rice” form (or grate).
- In a large bowl whisk cauliflower rice, eggs, cheese, almond flour, Italian seasoning and garlic powder. Season with salt and pepper.
- Place batter into prepared waffle iron, spreading evenly.
- Cook for 6½ minutes. Do not open too soon or the waffles will remain stuck to the iron.
- Remove waffle from iron, grease again, and repeat with remaining batter.
- Serve warm!

These were AMAZING!!! I used frozen "riced" cauliflower from Aldi, X-tra sharp cheddar, Mexican cheese blend, and a small handful of Chihuahua cheese. Subbed Mexican spices (used the oregano + garlic powder but added cayenne, chili powder, & cumin).
Normally, almond flour is a really "thirsty" flour, but I actually wound up using a bit more (I find it's easier to mix, and let sit for a few minutes, to gauge whether or not I need more moisture). In this case, I did wind up using more so, to combat that, I added about 1T baking powder, to help combat the weight of the flour and to provide lift.
I have a round, flip-over Belgian waffle-maker. I got 1 full waffle and another nearly-full waffle (it's 8-9" in diameter). Hubbie wanted 1/2 of the FULL waffle, so he got a solid 3 meals outta this. Topped with sunny-side up egg and salsa. Divine!!! I wouldn't have thought -EVER- to use cauliflower rice in an application like this but it somehow kinda "melted" into the waffle and it just wasn't super-weird, texturally. Idk if it'd make a difference using fresh, or not, but with the frozen, it's so soft once thawed? It really worked. This one is a keeper! Next time, I'll double the batch and freeze! Who knew?! Oh, wait - YOU did, clearly!!!
Hubbie has had (genetic, unfortunately) some heart issues and recently had another 3 stents placed; he's back in cardiac rehab despite NOT being overweight, smoker, etc., and working daily as a General Contractor, so super-active. He's chosen Keto, but I am not, so I'm always looking for recipes to support his eating that aren't radically-different from how he's been accustomed to eating. In this case, he loves waffles! So, this was a wonderful recipe (I make a cornbread waffle recipe for Mexican waffles, and this reminded him of that, so A++!). Anyway, I'm sure grateful to find a way to keep him satisfied in his new way of eating without feeling like it's a sacrifice.
