Slow Roasted Pork With Honey Mustard and Sauerkraut
Sometimes you have a lot of random leftovers in your fridge and don't know what to do with it. I always recommend making sheet pan dinners with a plethora of ingredients that make sense together. I have tried this multiple times and sometimes it is a failure, but other times like today it turns out absolutely delicious. If you live near a Trader Joes - run and buy their "sweet dill honey mustard" sauce. It is only $1.99 and is key to this sweet and sour tasting pork. If you do not live near a trader joes, any sort of honey mustard or mustard will work fine.

This is the secret ingredient but if you do not have this, a regular honey mustard will work just fine.

Slow Roasted Pork with Honey Mustard and Sauerkraut
- 2 lb pork loin or shoulder
- 1/4 cup honey mustard
- 1 cup sauerkraut
- 1 apple thinly sliced
- 1 onion thinly sliced
- 1 tbsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Herb de Provence seasoning (optional)
Instructions
Slow Roasted Pork with Honey Mustard and Sauerkraut
- Preheat oven to 325 degrees
- In an oven safe dish place pork, onion, apple in pan
- Brush honey mustard on top of pork being sure to evenly coat all sides and top
- Place sauerkraut on top
- Cover with a lid or aluminum foil and bake for 1.5 hours
- After the time, take out and if it is cooked, use tongs to mix pork and juices together. If it does not look cooked, place in the oven for another 20 minutes
- Preheat oven to 425 degrees
- Bake for an additional 20 minutes uncovered
- Be sure to use food thermometer to make sure it is cooked through. This should be enough time but it does depend on your oven and climate
