Pan Seared Herb, Garlic, & Lemon Lamb 'Lollipops'

My husband's birthday was last month and since we could not go out for a fancy birthday dinner due to COVID-19, I told him to think of me as his personal "magic cooking genie" and told him that I would make a special dinner with all his favorites . Although I asked him what he specifically wanted me to make (you know just trying to be polite), I already knew what his answer was going to be..... lamb chops! When I tell you that he LOVES lamb chops it is not an exaggeration (he could eat an entire rack by himself). I usually do not cook lamb often, but when I do, I always cut the racks up into individual lamb 'lollipops' because A) they are so cute B) they cook wayyyy faster than roasting an entire rack of lamb in the oven and C) they are easy to eat (fork and knife optional). I love the combination of garlic, herbs, and lemon with the lamb - it's savory, aromatic, and a bit citrusy. These lamb 'lollipops' can be 'dressed up or down' - pair them with roasted fingerling potatoes and seasonal veggies or pile up a bunch of crispy, golden French fries, either way you're going to love them as much as my husband does!

Boy oh boy, this slow cooker pulled bbq brisket is just AMAZING! All you have to do is rub the brisket down with the spice rub, dump an entire bottle of bbq sauce on it, and let it sit in the crock pot for six to eight hours. It is so easy! Serve this slow cooker pulled BBQ brisket warm with rice, on hamburger buns, or eat it by itself! You can store this in the refrigerator in an airtight container for up to four days. You can also freeze this in a freezer safe container for up to three months.

This year it will just be Phillip and I celebrating so we decided to switch it up but keep my favorite part of the meal. Cranberry- Sauerkraut Meatballs

Let me start by saying I am NOT a fan of sauerkraut. Never have been. But then one day a friend brought these meatballs to a family gathering. I of course had no idea there was sauerkraut in them or I would never have eaten them. Of course, once I did know, it was too late. I'd already eaten five of them, and I couldn't deny they were absolutely delicious! Now they are one of my go-to appetizers! I like to make my own meatballs, but if your don't have time, a bag of frozen will do just fine! Then just a few more ingredients, a slow cooker and VIOLA you have the perfect appetizer for family and friends!

Dry Rub Grilled Pork Tenderloin

Great weather in sunny California, to enjoy the outdoors and keep on grilling. We are enjoying our late afternoons at our small patio and grilling meats and veggies for easy family dinners and fun conversations.I typically like to grill steaks, burgers, chicken breast and veggies. Usually, I for pork tenderloin seared first in a hot cast iron grill and then baked in the oven until is cooked through. This time, my husband asked why don't we grill it, it will bring the smoky flavors to next level. I am so glad we did. That salty smoky crust and so juice and tender inside.The spices I used for this grilled pork loin recipe, is a dry rub I made at home combining my favorite seasonings. There is some smokiness coming from the smoked paprika and cumin which are the key ingredients for this dry rub.This meat is so juicy and tender and when cooked on the grill that dry rub make a perfect crust. The key is to let it rest before cutting so the juices stay inside the meat.For this dish I made blistered garlic and parmesan green beans topped with crunchy warm almonds... oh my a burst of flavors in one bite.Dinner is ready!
