Crockpot Apple Pork Tenderloin

I love the combination of apples and pork. I remember growing up, I would always eat applesauce with my pork chops (anyone else?!) Well since growing up, I have gotten a bit more sophisticated with my pork/apple combination.
This recipe was inspired by Trader Joes Pumpkin Butter. This week, I had a pork tenderloin thawed in the refrigerator, but didn’t know what to do with it until I saw the pumpkin butter in my cabinet and apples in my fridge. Apples + pumpkin butter + pork= yes please! I knew this had to be a winning fall combination!
I was a little hesitant about my “secret” pumpkin butter ingredient, but it turned out great and was a hit with my whole family! The flavors are the perfect combination of sweet, savory, and fall spice.
Crockpot Apple Pork Tenderloin

Ingredients
- 2 lb pork tenderloin
- 3 apples (skin on), sliced
- 2 tbsp. pumpkin butter or apple butter
- 1 cup low sodium chicken broth
- 2 tbsp. olive oil
- Garlic powder
- Onion powder
- Salt
- Pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season pork tenderloin on all sides with garlic powder, onion powder, salt and pepper.
- Sear pork tenderloin on all sides for about 2 minutes each side.
- Layer sliced apples in bottom of crock pot and top with pork tenderloin.
- Whisk pumpkin butter and chicken stock in small sauce pan over low heat until combined. Pour over pork.
- Cook on low for 6 hours.
- Shred pork tenderloin and pour apples and sauce on top.
