Hamburger and Potato Casserole

This cheesy Hamburger and Potato Casserole is packed with fresh spring flavors. With just 10 minutes of hands-on prep time this easy ground beef potato bake is perfect for busy weeknights. I have a soft spot for creamy casseroles and this ground beef and potato one ticks all the boxes when it comes to flavor and ingredients without using ready-made soups. The cheesy beef potato bake makes an easy midweek meal or delicious side dish for larger gathering such as Easter or Mother’s Day.

- Beef – I use lean ground beef with 15% fat but a higher fat content works well too. You can even substitute a portion with ground pork or use pre-seasoned breakfast sausage or chorizo to spice things up a bit.
- Potatoes – Diced roasting potatoes such Yukon Gold, red, or russet potatoes work best. Potato slices would work well too. Hash browns are another convenient option.
- Veggies – The white of the green onions are used to flavor the beef while the green tops add extra color and flavor to the casserole as a whole. Add other vegetables including including mushrooms, peas, corn, or green beans to make it a complete meal.
- Garlic – I use fresh garlic in this recipe but you can substitute it with 1 tsp of garlic powder for the beef mixture and 1/2 tsp for the sauce.
- Cheese – The 3 cheese hamburger casserole is made with an easy cottage cheese Alfredo sauce. You’ll need full-fat cottage cheese, shredded parmesan, and mozzarella cheese for the topping. You can use a low-fat cottage cheese but it will become more watery and tastes less creamy. Cheddar cheese or Monterey Jack make good substitutes for mozzarella cheese.
- Milk – Whole milk works best but lighter versions or even cream can be used for a more indulgent variation.
1. Season the ground meat in a heated pan.
2. Brown the hamburger meat and add the white ends of the green onions and fresh garlic.
3. Add diced potatoes to a 9 x 13 inch baking dish.
4. Add the green ends of the green onions, reserving a tablespoon as a garnish for later.
5. Transfer the ground meat mixture to the casserole dish.
6. To make the sauce, simply blend up cottage cheese, milk, grated parmesan, garlic, salt, and black pepper.
7. Drizzle the sauce on top and mix to combine everything.
8. Add a generous layer of quick-melting cheese to the top and bake it for 40 minutes.
- Oven temperature: Make sure the oven has reached 400F (200C) and is ready or the potatoes won’t be cooked.
- Prevent dry beef: By initially undercooking the beef, you prevent it from getting rubbery and dry during the oven cooking.
- Rest up: Resting the cooked casserole for 10 minutes after cooking allows the juices to redistribute and settle, making it easier to serve and enjoy the ground beef casserole with potatoes.

Ingredients
- ▢ 2 lb potatoes diced, 1/2 inch
Ground beef mixture
- ▢ 1 tbsp olive oil
- ▢ 1 lb ground beef
- ▢ 1 tsp salt
- ▢ 1/2 tsp ground black pepper
- ▢ 3 green onions whites, reserve greens
- ▢ 2 garlic cloves
Cheese sauce
- ▢ 1 cup cottage cheese full-fat
- ▢ 1 cup milk
- ▢ 1/2 cup parmesan cheese grated
- ▢ 1 garlic clove
- ▢ 1/2 tsp salt
- ▢ 1/8 tsp black ground pepper
- ▢ 3/4 cup mozzarella cheese
Instructions
- Preheat the oven to 400F (200C).
- Wash the potatoes, pat-dry them, and cut them into 1/2-inch cubes.2 lb potatoes
- Add the diced potatoes and sliced green onion tops to the casserole dish. Reserve 1 tbsp as garnish.
- In a medium pan, heat the olive oil over medium-high heat. Add the ground beef and break it up into small pieces while browning it. Season it with salt and pepper. 1 tbsp olive oil, 1 lb ground beef, 1 tsp salt, 1/2 tsp ground black pepper
- Add the chopped white ends of the green onions and the garlic. Cook for 1-2 minutes until softened and fragrant while stirring. Remove the pan from the heat and transfer the browned beef mixture to a 9 x 13 inch casserole dish.3 green onions, 2 garlic cloves
- To make the sauce, add everything to a blender and blend it until smooth. Add the sauce on top and gently stir everything until thoroughly combined. 1 cup cottage cheese, 1 cup milk, 1/2 cup parmesan cheese, 1/2 tsp salt, 1/8 tsp black ground pepper, 1 garlic clove
- Add the mozzarella cheese on top and bake for 40 minutes.3/4 cup mozzarella cheese
- Remove the hamburger potato casserole from the oven and let it set for 10 minutes before serving. Garnish it with the remaining green onions or fresh parsley. Enjoy!
Tips
- Beef: Undercook the ground beef initially so it doesn’t become dry and rubbery during the oven baking.
- Cover: If the casserole is getting too dark during baking, cover it with foil.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can freeze it for up to 3 months for longer storage.
