Mexican Monday! or Any Other Day in the Week :)
When feeding a big group what comes to mind for you? For me its Mexican food! I mean who doesn't love Mexican? Kids and adult a like, and with so much variety, there is something for everyone. So when it was our turn to cook for 10 on our family getaway you know that was where I was going!
On the menu:
- chips with the best mango peach salsa EVER! and trust me I have done my fair share of trying salsa. Also, of course my famous guac had to be included (see previous posts for recipe)
- chicken fajitas
- beef tacos
- re-fried beans
For the fajitas, I used onion, bell peppers, tomatoes, chicken breast and cilantro.
I started by sauteing the the onions and the peppers in a pan with some olive oil on medium heat.
Then I sliced the chicken and added it on top of the sauteing veggies.
I diced up some tomatoes and threw them on with salt and pepper to taste.
Once the chicken was just about done, I added a table spoon of salsa and cilantro.
Next was the beef taco meat which required the same ingredients except switch out the chicken for ground beef.
I diced the onion, tomato, pepper and put them in a pan with the ground beef. Simmered on medium heat.
Once again, when it was just about done cooking I added cilantro and a spoonful of salsa.

Ingredients
Chicken Fajitas
- 8 oz. chicken breast
- 1/2 sliced onion
- 1 diced tomato
- 1/2 sliced bell pepper
- salt & pepper to taste
- cilantro
- salsa
- soft shell tacos
Beef Tacos
- 8 oz. ground beef
- 1/2 chopped onion
- 1 diced tomato
- 1/2 diced bell pepper
- salt & pepper to taste
- cilantro
- hard taco
Instructions
Chicken Fajitas
- Slice bell peppers and onion and place in pan to saute with olive oil on medium heat for 7 minutes.
- Slice chicken and add on top with diced tomatoes. Cook for 10 minuets.
- Add a tablespoon of salsa and sprinkle of cilantro. Cook for another 3 minutes.
- Serve with soft shell taco and your favorite garnish (sour cream, salsa, re-fried beans, guac.)
Beef Tacos
- Chopped bell peppers, tomatoes, and onion and place in pan. Add ground beef and cook for 15 minutes breaking up the meat.
- Add a tablespoon of salsa and sprinkle of cilantro. Cook for another 3 minutes.
- Serve with hard shell taco and your favorite garnish (sour cream, salsa, re-fried beans, guac.)
