- 1 egg
- ⅔ cup white sugar
- ¼ cup date syrup
- 2 teaspoons vanilla extract
- 1 cup natural, unsalted peanut butter
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ¼ cup gluten-free flour
- 150 grams blondie chocolate (or any other chocolate you prefer), broken into pieces
Instructions
- Preheat your oven to 350°F (175°C) and line an 8”x8” baking pan with parchment paper.
- In a large mixing bowl, whisk together the egg, sugar, date syrup, and vanilla extract until well combined. Add the peanut butter and mix until smooth.
- Stir in the gluten-free flour, baking soda, and salt until just combined. Gently fold in half of the chocolate pieces. The batter will be thick.
- Transfer the batter to the prepared baking pan, spreading it evenly and push in the remaining chocolate pieces evenly around the baking dish.
- Bake for around20 minutes and remove the pan from the oven.
