Ingredients

  • 1 egg
  • ⅔ cup white sugar
  • ¼ cup date syrup
  • 2 teaspoons vanilla extract
  • 1 cup natural, unsalted peanut butter
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ cup gluten-free flour
  • 150 grams blondie chocolate (or any other chocolate you prefer), broken into pieces
Instructions

Preheat your oven to 350°F (175°C) and line an 8”x8” baking pan with parchment paper.
In a large mixing bowl, whisk together the egg, sugar, date syrup, and vanilla extract until well combined. Add the peanut butter and mix until smooth.
Stir in the gluten-free flour, baking soda, and salt until just combined. Gently fold in half of the chocolate pieces. The batter will be thick.
Transfer the batter to the prepared baking pan, spreading it evenly and push in the remaining chocolate pieces evenly around the baking dish.
Bake for around20 minutes and remove the pan from the oven.
Let the blondies cool completely before slicing into 9 pieces. Enjoy!
