I love making these little egg bites because they are super delicious, healthy, and easy to make. I have a busy lifestyle and long work hours. I make these in advance and they can be kept in the refrigerator or freezer for easy grab-and-go meals. I use whatever ingredients I have on hand, but the basic principle of the recipe remains the same. Use a deli meat on the outside of the egg bites, prosciutto, turkey, salami, ham, fill the muffin tray with an egg mixture and whatever veggies or spices you want and top with whatever cheese you want. It is also a great recipe to clean out whatever scraps of bits and bites you have leftover in your fridge and mix them up.

Ingredients
- 12 thin slices deli turkeyÂ
- 10 large eggsÂ
- 1/2 tsp salt and pepperÂ
- 1 tsp smoked paprikaÂ
- 1/3 cup minced red pepperÂ
- 1/2 cup shredded cheddar cheeseÂ
- 1 jalapeño, cut into 12 thin slicesÂ
Instructions
- Spray nonstick muffin pan with avocado oilÂ
- Line muffin pan with a slice of TurkeyÂ
- Whisk together eggs, add salt, pepper, smoked paprika
- Add red pepper to egg and mix thoroughly
- Pour egg mixture into muffin panÂ
- Evenly distribute pinch of cheese over muffin panÂ
- Top with jalapeñoÂ
- Into 350 degree oven for 12-15 minÂ
- Eat immediately or store in a tight container in fridge or freezer.Â

What could you use instead of the meat slice to make this vegetarian friendly?
How long will they stay in the fridge? Do you thaw them out first if in the freezer?
