This recipe is perfect for spring! If you have sourdough discard, this recipe is so easy and nice to make. It is technically a bread, but my 3 year old says it's a cake so that's a win. I made this recipe for someone who doesn't like sourdough and they told me this is the first recipe they liked because it didn't taste sour. The sugar cuts the sourness. The key is to use a fresh lemon to get a very natural lemon flavor.

Sourdough Lemon Loaf
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 cup white sugar
- 1 tsp vanilla
- 1/4 cup lemon zest
- 1/2 cup cooled melted butter
- 2 eggs
- 1/2 cup discard
- 1/4 cup fresh lemon juice
- 1/4 cup milk
Lemon Loaf "Frosting"
- 1/4 cup Greek yogurt
- 2 tbsp powdered sugar
- 1 tsp vanilla
- 1 tbsp lemon zest
- 1 tsp lemon juice
Instructions
Sourdough Lemon Loaf
- Preheat oven to 375
- Mix dry ingredients (flour, baking powder, salt, sugar, and zest) in a large bowl
- Slowly add in remainder ingredients starting with discard, butter, eggs, lemon juice, vanilla, and milk
- Pour batter into prepared bread loaf pan and bake in oven for 15-20 minutes
- For glaze: In a small bowl, mix ingredients until well incorporated. Add milk or water if you want glaze to be thinner
Tips
- I use Greek yogurt for the glaze because it is a healthier alternative than traditional frosting ingredients
- Add lemon zest on top for presentation
