RAINBOW MEDITERRANEAN COUSCUS SALAD

Today, I want to share a great salad recipe you can bring to your next backyard summer party. A handful of colorful ingredients, some fresh herbs and tangy dressings its all you need. Let's get cooking!
A delicious combination of fresh veggies, like bell peppers, green onions, herbs and Kalamata olives, dressed with a tangy dressing, it’s what you to make this weekend. The couscous is fast cooked and seasoned with turmeric and Mediterranean spices to elevate the flavor of this grain.
For this recipe I grab a handful of simple ingredients:
- colorful peppers
- green onions
- mix fresh herbs (dill, mint and parsley)
- kalamata olives
- tangy Za'atar dressing just perfect
How fabulous is this salad?
Just simple add allthe ingredients into a bow, add the dressing, and plate with your favorite protein. I made spiced grilled chicken but this goes also great with grilled shrimp, fish, falafels or kaftas. And the bets that comes together in less than 30 minutes.

RAINBOW MEDITERRANEAN COUSCUS SALAD
Recipe details
Ingredients
- 3/4 cup of dry couscous
- 1/4 tsp of turmeric powder
- 1/2 tsp of salt
- 1/2 tsp of Za'atar seasoning
- 1 cup of water
- 1 cup of chopped colorful peppers or 1/2 of each red and yellow pepper
- 3 green onions chopped
- handful of kalamatta olives
- Handful of mix dill, parsley and mint (chopped )
Za'atar lemon dressing
- Juice of 1/2 lemon
- 1 tsp of Za'atar seasoning
- 1 tbsp of extra virgin olive oil
- dash of honey to balance flavors
- Salt and pepper to taste
Instructions
- In a large bowl, add the couscous, seasonings and hot water.
- Cover and let it rest for 10 minutes
- Then uncover and fluff it with a fork
- Chopped the onions and 1/2 red and yellow bell pepper and chop the kalamata
- In a bow add about a cup of cooked couscous, add the onions, the bell pepper, fresh chopped herbs, the olives and add desired amount of the dressing. Adjust salt if needed.
- Plate and serve with grilled chicken and tzatziki.
