This sushi bake was such a fun date night activity! It's pretty easy to prepare and it's a fun activity & delicious dinner all in one. The best part about it is that there's little clean up -- it's basically a one pan meal. The key is seasoning your sushi rice well. It'll add so much flavor to the dish overall. If possible, find the Japanese short grain rice (usually labeled as sushi rice), but the white rice you have on hand should work as well. Next, it is important to add rice vinegar, sugar, and salt. This combination will provide the best flavor for your sushi bake.

Ingredients
sushi rice
- 3 cup rice
- 2 1/4 cup water
- 1/3 cup rice vinegar
- 3 tbsp sugar
- 1 1/2 tsp salt

- 1 pack imitation crab
- 1/3 cup kewpie mayo
- optional: cooked salmon
- optional: additional 1/3 cup kewpie mayo
- 1/4 cup furakake seasoning
Instructions
sushi rice
- Heat the rice vinegar in the microwave for 20 sec.
- Mix in the sugar and salt. Continue to heat if not fully dissolved.
- Mix with your cooked rice.

- Assemble rice in a 9x11 baking pan.
- Add a layer of furakake.
- Mix the imitation crab with kewpie mayo, and the salmon as well if using.
- Add another layer of furakake.
- Add optional drizzle of kewpie mayo.
- Bake at 450 for 10-15 min.
- Serve warm and eat with seaweed snack sheets.
