Wicked Good Green Dressing To Stave Off the Christmas Pounds
Well, the holiday season is upon us! The time of year when elastic waistbands become our best friends. But this year, I decided to wage a preemptive strike against the inevitable Thanksgiving-to-Christmas waistline expansion with a recipe that’s as tasty as it is waistline-friendly: our wicked good green dressing!
While the turkey and pies do their best to tempt you into hibernation mode, let this dressing be your culinary saviour. It’s fresh, flavorful, and filling (if you raid your fridge). And a not-so-subtle reminder that delicious doesn’t have to come with a side of stretchy pants.
My favourite play is Wicked, so it only felt right to give this green dressing a name that’s just as enchanting! It all starts with an avocado.
The easiest way to scoop out an avocado is to score it into squares as you see below.
Then pop it into a food processor. We swear by this Cuinsinart Mini-prep; perfect for whipping up a quick dressing!
Add in the rest of the ingredients. Kefir will give this dressing a tasty tang.
Note that the garlic in this recipe is raw, so cut back or leave it out if you find it too spicy. You can also try roasting it to mellow it out and sweeten it; let it cool and add it in.
Instead of fresh herbs, we defrost use these frozen ones. They taste just as fresh. But, the benefit is they don’t spoil – so we never throw away a single herb. Feel free to add more herbs to your own taste.
Mix until perfectly smooth and creamy. It's so good, you'll want to run a spatula around the food processor bowl to get every drop.
You should end up with about a cup of green goddess dressing. Give it a taste and adjust to your liking. If you find this too tangy, add more avocado or cut down on the lemon juice and rice wine vinegar next time.
The Salad
Now it’s time to raid the fridge for whatever you have on hand.
TIP: if you have a Costco membership, you can’t beat the taste or convenience of the chicken skewers shown above!
Chop one up with the rest of the ingredients and add it to the salad as your protein.
I also like a sprinkle of goat cheese!
Instead of anchovy, I add green olives for the kick of salt.
Because we’re trying to be ‘good’ before the holiday feasts, add some micro greens too.
Micro greens are so healthy!
And so is this dressing! Avocado is full of healthy fats and Kefir has probiotics which supports gut health. We also suggest you use olive oil in the dressing for the antioxidants and anti-inflammatory properties. Believe me when I say, healthy food never tasted so good!

Ingredients
- 1 avocado pitted and cubed
- 1/8 cup lemon juice
- 1/2 cup Kefir
- 1/4 cup olive oil
- 1 small garlic clove minced
- 1 TBSP rice vinegar
- 1/2 tsp salt
- 1 teaspoon dijon mustard
- 1 cube Toppits frozen basil thawed
- 1 cube Toppits frozen parsley thawed
Instructions
- Place all ingredients into a food processor and mix until smooth. Pour into a cup to serve on a salad.
Tips
- Taste this before you serve and feel free to adjust to your own taste.
