Chicken Salad With Cottage Cheese

Have you hopped on the Cottage Cheese train yet? 😁 I have and in full force, I’ve always been a cottage cheese lover but with all the new recipes, ways to use it and varieties out there it’s a whole new world. Not to mention how good it is for you!
This is the latest thing I’ve been making on repeat for lunches, it comes together so quick and can be used in a sandwich or pack with some cut veggies or crackers, or as I’ve done, just eat a big scoop on top of a salad.
This is my favorite brand out there, there’s something about the consistency, it’s thicker and denser than other brands.
dice up 2 cups of cooked chicken, this is the shredded chicken I made in a previous post which works perfectly for this. You can also use rotisserie chicken, canned chicken or any chicken that you use for your chicken salad normally
Add a half cup of diced celery
a fourth of cup of diced scallion
Put the celery, scallion and chicken in a bowl and add a squeeze of fresh lemon (this would equate to 1 tablespoon)
Add 1/2 teaspoon of garlic powder
And 2 tablespoons of red hot, I like it spicy
Add one cup of cottage cheese and mix this all together
This will be your new addiction, keep in fridge for 4 days, but it probably won’t last that long.

Ingredients
For the chicken salad
- 2 cups cooked diced chicken
- 1 cup cottage cheese
- 1/2 cup diced celery
- 1/4 cup diced scallion
- 2 tablespoons hot sauce
- 1/2 teaspoons garlic powder
Instructions
To make the chicken salad
- Mix all the ingredients together in a bowl, that’s it!
Tips
- Use spices you like, omit the lemon if you wish. This is totally customizable!

This sounds good. I put cottage cheese in lots of things one would not normally think of using it in with good results.
I make this with white albacore tuna !!
