Onion Masala Thokku
Onion masala thokku is a traditional South Indian recipe which is famous for its everlasting taste.
It's very simple to make with easy steps.
But will taste like heaven 😋 😋 😉.
Come let's get into the recipe.
Take a lemon size tamarind and soak it into lukewarm water for 20 minutes.
After 20 minutes, mash it in the water and remove the pulp and keep the tamarind water separately.
Now keep a pan on the gas stove.
Add 30 GM's of methi seeds and dry roast it.
Now add 30 gms of mustard seeds and roast alongwith the methi seeds.
Now add two tablespoons of black pepper and add to the methi seeds and mustard seeds.
Roast all the three ingredients till you get nice aroma. Roast it on medium flame so that it doesn't burn.
Remove it from the pan and keep it aside. Let it cool.
Put all the three ingredients into a mixy jar and grind it into coarse powder.
Keep the powder separately.
Let's start cooking Onion masala thokku.
Keep the same pan.
Add two tablespoons of sesame oil.
Then add 10 to 15 fresh peeled garlic into it. Start frying it till the raw smell subsides.
Now add the king of the ingredient, ie. Onion shallots. Add half kg Onion shallots. Remove the skin and wash it thoroughly under the water. Wipe off the water and add the shallots alongwith the garlic and start roasting it.
Now add a handful of fresh curry leaves.
Mix everything together and continue to stir it till the onion colour changes into pink.
Add salt ( 2 tea spoons). Mix everything together.
Now add a glass of water to it.
Cover it with a lid. Let the Onion shallots, and garlic gets cooked.
(If you prefer you can pressure cook it to buy leaving two whistles).
Leave it for 10 minutes, both onion and garlic will get cooked nicely. Mash it with a spatula and add the tamarind extract which we prepared it in the beginning. The tamarind extract water would be of 200ml.
Let it boil.
Add two tablespoons of chilli powder.
One teaspoon of turmeric powder.
Mash everything together. Let the tamarind water, alongwith the red chilli powder and turmeric powder get cooked well in the Mashed onion.
Now add two spoons of the roasted and coarsely ground powder which we prepared initially.
Mix everything together.
Now add a teaspoon of jaggery powder.
Adding jaggery powder will enhance the taste of this recipe.
Let everything get cooked well in medium flame.
The consistency will be thick which is called as thokku.
That's it.
Tasty tasty Onion masala thokku is ready to be served.
Remove it from the pan and serve it hot . This can be paired with rice mainly. And can be stored for a week in an airtight container.

- 1tspn turmeric powder

Instructions
Coarse powder
- Heat the pan
- Add 30 GM's of methi seeds
- Add 30 GM's of mustard seeds
- Add two tablespoons of black pepper.
- Grind it coarsely and keep it aside.
Process / steps of making Onion masala thokku
- Heat the pan or Kadai.
- Add two tablespoons of sesame oil
- Add 15 fresh peeled garlic
- One hand ful of curry leaves
- Half kg Onion shallots
- A pinch of asafoetida
- Add two tspoonsbof salt
- Add a glass of water. Mix everything together and cover it with a lid.
- Let the Onions and garlic become soft.
- Mash it.
- Now add tamarind pulp
- Add one tablespoon of red chilli powder
- One tspoon of turmeric powder
- Check the salt now as we have already added salt to it.
- Let everything boil together for 10 minutes.
- Let the raw smell of tamarind pulp goes down.
- Add two tablespoons of the roasted and ground powder ( methi seeds, mustard seeds and black pepper)
- Mix everything together.
- Finally add a spoon of jaggery powder ( optional).
- Let everything gets cooked and bring it to thick consistency.
- Put off the flame.
- Transfer it into a bowl
- Enjoy with hot rice with a spoon of Desi ghee.
Tips
- Adding jaggery powder is optional.
- But it will enhance the taste of the dish.
