I'm coming at you with another super easy and quick-to-make lunch recipe that your tastebuds will thank you for! Herby Tortellini with a bunch of veggies and sprouts and a few key spices is the total bomb and you need to try this!
I absolutely adore how green this plate is and how nutritious it is! Zucchini, kale, cress, and some mushroom are the key ingredients here, so nothing fancy pansy - but all the yummy stuff you can get in your local store!
Feel free to substitute kale for spinach or rocket if you prefer - those will work well with this recipe too! Just eat your greens and fuel your body well!
Herby Tortellini With Veggies

Ingredients
- 200g (7 oz) herby (or mushroom) tortellini
- 1 medium zucchini
- 6 mushrooms
- 2 handfuls of kale
- cress
- salt, pepper, thyme and granulated garlic to taste
Instructions
- Cook tortellini by following the instructions on the packaging.
- Cut zucchini and mushrooms into smaller chunks and fry for 2-3 minutes and add in washed kale. Cook for a further 4-5 minutes or until soft.
- Add in spices and mix well.
- Drain tortellini and top up with a veggie mix. Finish off with some cress and you're ready to go!
