Sometimes you just need a cookie, but don't always want the added calories and sugar that come with traditional cookies.


If you are looking for a healthy twist on a Fall treat that is also delicious, you have to try these cottage cheese pumpkin chocolate chip cookies. They are simple to make, and hit the spot when that sugar craving hits.

With only 99cal, 4g fat, 6.5g carbs, and 5g protein each, they are a healthy alternative to traditional cookies.

Simply combine the cottage cheese, maple syrup, and vanilla extract in a blender until smooth and then mix with the almond flour, protein powder, pumpkin pie spice and melted butter in a large bowl. Stir in chocolate chips and top with sprinkles if desired.

Bake at 350 degrees F for about 15 minutes and allow to cool completely before moving to a plate.

The best part is that you can tweak these cottage cheese cookies to create a healthy dessert any time of the year. Simply leave out the pumpkin spice for traditional chocolate chip cookies; add white chocolate chips, toffee pieces or peanut butter chips to change the flavor of the cookie; change up the sprinkles for different holidays and occasions throughout the year.

Ingredients

  • 1 cup large curd cottage cheese (I use 4% milk fat)
  • 1/4 our maple syrup
  • 1 tbsp vanilla extract
  • 2 tbsp melted butter or coconut oil
  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1 tbsp pumpkin pie spice
  • 1/2 cup chocolate chips, plus more for topping
  • Sprinkles for decorating if desired
Instructions

Preheat oven to 350 degrees F
Combine cottage cheese, maple syrup, and vanilla extract in a blender until smooth
Whisk together almond flour, protein powder and pumpkin pie spice in a large bowl
Stir cottage cheese mixture and butter into flour mixture
Fold in chocolate chips
Scoop dough onto a prepared baking sheet lined with parchment paper
Bake for 15 minutes and allow to cool completely before transferring to a plate
