Green pesto and Brie, eggs on toast.
You may have made pesto eggs before but have you crumbled fresh French Brie on top! When in France ay 🇫🇷 Pesto eggs have become super popular and it’s a delicious take on an eggy breakfast. With a little bit of Brie on top, this eggy breakfast has now turned super classy.
This recipe is delicious and is ready and on the plate in under 10 minutes. The perfect high protein breakfast or lunch whether your busy or not!

Green Pesto and Brie, Eggs on Toast.
Recipe details
Ingredients
- 1/4 red onion
- handful of mushroom
- 1 egg
- 1 desert spoon of green pesto
- 1/4 triangle of Brie
- toast to serve
Instructions
- Finely chop your onion and soften in a frying pan for a few minutes.
- Slice your mushroom add to the pan and repeat.
- Now add in your pesto and cook for another minute.
- Make a hole in your mixture and crack in your egg.
- Lower the heat, and add a lid, let the eggs cook until solid.
- Meanwhile cut your brie into small pieces.
- Add your brie on top of your pesto, and cook with the lid on for another minute until it starts to soften.
- Serve on your toast and enjoy!
