Ingredients
For the filling:
  • 6–7 ripe peaches (about 900g), peeled and sliced
  • 2 tbsp lemon juice
  • 2 tbsp plain flour
  • 3 tbsp brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp vanilla extract (optional)
For the crumble topping:
  • 120g plain flour
  • 100g rolled oats
  • 100g brown sugar
  • ½ tsp cinnamon
  • 100g cold unsalted butter, cubed
  • Pinch of salt
Instructions

Preheat your oven to 180°C (160°C fan).
In a large bowl, toss the peach slices with lemon juice, flour, sugar, cinnamon, and vanilla until evenly coated. Spread the mixture into a medium baking dish.
In another bowl, mix the flour, oats, sugar, cinnamon, and salt. Add the cold butter and rub it in using your fingertips until the mixture resembles coarse crumbs.
Sprinkle the crumble topping evenly over the peach filling.
Bake for 35–40 minutes, or until the top is golden brown and the fruit is bubbling around the edges.
Let it cool for 10 minutes before serving.
