Fruit Pizza Cookies
This may be the best Summer dessert I’ve ever made, not only do they look adorable on a tray, but the sugar cookies are perfect to balance the sweet frosting and the fresh fruit on top is is just what a Summer dessert should be!
And did I mention that these are totally customizable use whatever fruit you like don’t like blueberries? Leave them out, would you rather put diced peaches sure go right ahead! I chose a mix of blueberries, kiwis, raspberries, strawberries, and clementines
To make the cookies, add one cup butter cubed up to a large mixing bowl
Add one cup of sugar to the butter
Mix the sugar and butter together
And add one egg
Add 1 teaspoon vanilla extract and mix well
In a separate bowl at 3 cups of flour
Add 2 teaspoons baking powder to flour
Add the flower mixture to the wet ingredients, alternately mixing in between, The batter will be somewhat crumbly
Line a cookie sheet with parchment paper and preheat oven to 350°
These are somewhat large cookies you’re going to want to roll balls of 3 tablespoons of dough for each cookie
Place the cookies, 3 inches of part on the cookie sheet and with the bottom of a glass press down the cookie
Bake cookies, 8 to 10 minutes until edges are slightly browned do not overcook them, let them cool completely on the cookie sheet before transferring them to a cooling rack for another five minutes
This will make a circle indentation so the frosting will stay put, I found that wetting the bottom of the glass makes for easy removal from the dough.
While the cookies are cooling, make the frosting, start by adding one stick of softened butter, and one package of cream cheese, softened to a mixing bowl and beat until fully incorporated
Add 3 and 3/4 cups powdered sugar to the creamed mixture, I added one cup at a time mixing on low speed Until fully incorporated
Frosting should be thick and not runny
Frost cooled cookies with approximately 2 Tablespoons of frosting each
Top each cookie with the assortment of fruit that you chose

Instructions
Make the cookies
- Preheat oven to 350°
- Line a cookie sheet with parchment paper
- Mixed butter and sugar together in a mixing bowl
- Add egg to the mixture
- 1 teaspoon vanilla extract and mix well
- In a separate bowl, add the 3 cups of flour
- Add 2 teaspoons of baking powder and mixed together
- Alternately add the flower mixture to the creamed mixture and mix well the batter will be crumbly
- Roll 3 tablespoons of batter into balls and place on parchment lined cookie sheet 3 inches apart
- With a glass press down on each cookie to make a circle indentation
- Bake for 8 to 10 minutes until the edges are lightly browned do not over bake
- Allow cookies to completely cool on cookie sheet cooling rack for five minutes
Frost the cookies
- Frost each cooled cookie with 2 tablespoons of the frosting, keeping it in the circle indentation area
- Top the frosting with the choice of fruit chopping small so that it all fits and makes a pretty presentation
