Baked Feta With Physalis and Figs

If you're looking to wow your guests with a dish that combines bold flavors, vibrant colors, and a touch of Mediterranean elegance, then this honey-baked feta with physalis, figs, and tomatoes is a must-try. Served on a bed of pearl couscous, prosciutto di Parma, and a sprinkling of sumac, it’s the perfect balance of sweet, savory, and tangy.


The sweet-and-salty combination of honey-baked feta with caramelized figs and tomatoes offers a burst of flavor in every bite. The addition of physalis (also known as golden berries) adds an unexpected pop of tartness, making this a great mix of sweet and savoury elements.


The dish takes less than 30 minutes to make and it is sure to impress!

What you'll need:

  • Physalis: if you haven't tried physalis yet, I absolutely recommend you do. It's normally served as garnish, adding tanginess to the dish. When baked, the flavour is much milder, beautifully complementing the other ingredients.
  • Tomatoes: prick some colourful and fresh cherry tomatoes to add to the jamminess of it all
  • Figs: in season, I would go for fresh figs. However this is hard to find right now so I've gone for dried figs and rehydrated them by soaking in water for half an hour before cutting and baking.
  • Feta: the star of the dish. Baked until golden and soft, it ads the natural saltiness of the cheese, which balances out nicely with the fruit.
  • Seasonings: I used sumac, salt, and pepper to taste. Honey and olive oil for drizzle.

How to make:

  • Cut the fruit in half and place in an oven proof dish, place your feta blocks in the centre 
  • Drizzle all with olive oil and honey
  • Season with sumac, salt and pepper 
  • Place in the oven preheated to 180c fan for 15-20 minutes, or until the feta is golden and the fruit soft and jammy.
  • While it's baking, boil some pearl couscous in a veggie stock.
  • Once cooked, drain and stir through spinach and sumac to taste.


It's that simple!

Served with some fresh prosciutto di parma, mint, and a drizzle of honey.

Ingredients
Baked feta
  • 200g physalis 
  • 250g cherry tomatoes
  • 200g dried rehydrated figs (or fresh figs if you can find them would be better)
  • 2 blocks of feta
  • 1tbsp olive oil
  • 2tbsp honey
  • 1tbsp sumac
  • salt and pepper to taste
Serving suggestion
  • 120g (1/2 cup) dry pearl couscous
  • 1 packet / cube vegetable stock (optional)
  • 1tsp sumac
  • A bag (100g) of spinach
  • A packet (100g) of prosciutto
  • Some fresh mint to garnish
Instructions
