Focaccia Pesto Sandwich

- 1 loaf Focaccia bread
- 2 tbsp pesto
- 1 ball fresh mozzarella, sliced
- 1 cup cherry tomatoes
- 3 garlic cloves
- Handful of fresh arugula
- 10-15 basil leaves
- Balsamic vinegar (for drizzling)
- Olive oil (for drizzling)
- Salt & pepper (to taste)
Instructions
- Preheat your air fryer or oven to 350°F (175°C). Roast the cherry tomatoes and garlic for about 5 minutes, or until the tomatoes soften. Once done, mash the tomatoes and garlic with a fork to create a rustic spread.
- Prepare the filling by slicing the mozzarella into thick slices. Wash and slice the tomatoes, and rinse and dry the basil leaves.
- Cut your focaccia bread into your desired sandwich shape. Drizzle olive oil onto the bread and toast it in the oven or on a pan until golden and crispy.
- To assemble the sandwich, spread pesto on the toasted focaccia. Layer on the arugula, roasted tomato-garlic mash, mozzarella slices, and fresh basil. Finish with a drizzle of balsamic vinegar and season with salt and pepper to taste.
