Double Chocolate Pretzel Magic Bars

Good morning friends, how are you? I hope that your week has gone well and that the heavy events of day to day life are not getting you down. Thank you for your emails, and comments regarding my last post, it is nice to know that I am not alone in my feelings. I like to believe that we are all going to be better for all that is going on.
Summer typically means bbq’s, pool parties, picnic’s and time at the beach, all of which are the perfect place to enjoy a sweet treat or two. My go to recipes for any summer event are brownies or bar cookies for two reasons: 1). they are easy to make and 2). because they are easy to transport.
Although I am not going to any big gatherings this summer I have been baking treats and sharing them with family and friends. The great thing about these bars aside from the taste is that you can freeze them! Simply wrap them in cling wrap, then in foil and when you want one take them out and let them thaw, they are scrumptious on their own or served with no-churn vanilla bean ice cream and maybe a drizzle of homemade hot fudge.
Chocolate Pretzel Magic Bars
1/2 cup melted butter
11/2 cups Oreo cookie crumbs
2 cans Sweetened Condensed Milk
2 cups 60% Ghirardelli Bittersweet Cacao Baking Chips
1 cup milk chocolate chips
11/2 cup sweetened flak coconut
11/2 cup crushed pretzel crisps
Heat oven to 350 F. Line a 9 x 13″ pan with foil or parchment paper, then spray with cooking spray. Melt butter and pour into pan, mix in the Oreo cookie crumbs, then pat into the pan to make a crust. Pour one can of sweetened condensed milk over the crust, try to spread it evenly. Scatter the 60% chocolate chips, milk chocolate chips and coconut over the condensed milk, then pour the other can of condensed milk over the chocolate and coconut. Top with the crushed pretzels. Bake for 30-40 minutes or until the edges start to look golden. The edges of the pan will start to bubble and the middle will jiggle a little. Remove from oven and let cool completely before cutting. Cut and enjoy.
