Need a quick and easy appetizer for the upcoming holiday season? Grab a box of phyllo shells and your imagination and you can whip up a whole bunch of different things.
Start with these mushroom and goat cheese tartlets: mushrooms cooked down with shallots, garlic, and wine, then mixed with goat cheese and topped with melty gruyere. Heaven!
Not a fan of goat cheese? Replace with cream cheese instead.
Cook up a batch of caramelized onions and stuff the cups with those, then top with a little slice of brie. Magic.
Or how about halved cherry tomatoes, mini balls of buffalo mozzarella, baked until melty and drizzled with balsamic glaze???

Mushroom & Goat Cheese Tartlets
Recipe details
Ingredients
- 1 T butter
- 1 T olive oil
- 1 small shallot, finely minced
- 2 cloves garlic, finely minced
- 2-3 sprigs of fresh thyme, or 1/2 tsp dried
- 8 oz cremini mushrooms, finely chopped
- 2 T sherry cooking wine (or sub white wine)
- 2 oz goat cheese, softened to room temp
- 1 c shredded gruyere cheese
- 1 box Athens phyllo cups (15 count)
- Extra mini sprigs of fresh thyme for garnish
Instructions
- Melt 1 T butter and 1 T olive oil in a sauté pan.
- Sauté the shallots and garlic with thyme over medium-low heat so as not to burn them.
- Add in chopped mushrooms and sauté until fully cooked and all liquid has evaporated. You may need an extra drizzle of olive oil if mushrooms seem a bit dry.
- Add sherry wine to pan and again cook until liquid is gone.
- Season with salt and pepper, remove thyme sprig, and allow to cool.
- You should end up with about 5-6 oz of cooked mushrooms.
- Combine mushrooms with goat cheese, mixing well.
- Scoop mixture into phyllo cups, about 1 T per cup.
- Top with a sprinkle of shredded gruyere cheese.
- Bake at 400 degrees for 10 min, then broil for 2-3 min to melt the gruyere. Don't walk away! The phyllo shells could burn.
- Out of the oven, top with a tiny sprig of fresh thyme for garnish.
Tips
- Not a fan of goat cheese? Use cream cheese instead.
