Once you air fry jalapeno poppers like I'm about to show you, you'll never go back. They're tender, perfectly charred around the edges, and are filled with melty, cheesy goodness. Best of all, there's no oven or stove required for days when you really need a break from the kitchen. They're one of my favorite snacks for gatherings, so I just can't wait to start busting them out for summer.

All my friends have asked me for the recipe, but until now I've refused to give up my secret ingredient: honey. My daughter can't believe I finally told them, except according to her, now I have to work extra hard to find a new secret ingredient no one knows about. That's how good these are!

Pro tip: To get the creamiest filling, make sure your cream cheese is fully softened at room temperature before mixing. Cold cream cheese leaves lumps and won't blend smoothly with the cheddar and bacon. Set it out 30 minutes before you start.

These tangy jalapeño poppers are quick and easy to make, plus they require little clean-up. In case you need more reasons to love them, here are a few:
Versatile: Wrap them in bacon for an extra savory kick or make them milder by using mini bell peppers.
Great for summer: Poppers are a classic appetizer and snack for the summer months. Enjoy them on their own or as part of a larger spread you can share with friends.
No-stove: This is great for when you've got other things cooking on the stove or simply don't want to turn it on but still need a great appetizer.
Tex-Mex inspired: Jalapeños, sharp cheddar, and smoked paprika are some of the main ingredients.
You only need a handful of simple ingredients for the best creamy, stuffed jalapeños you've ever made. The secret's in the cream cheese filling. Scroll to the bottom of the post for the full recipe card.
- Fresh jalapeño peppers: I prefer the larger ones because they hold more filling.
- Cream cheese: Feel free to use full fat or low-fat cream cheese.
- Cheddar cheese: You can use white, mild, or sharp. I buy mine shredded. Sometimes I use pepper jack too.
- Garlic powder: Onion powder is a good swap, so is finely chopped garlic.
- Smoked paprika: Mild paprika is okay as well, but avoid sweet paprika.
- Salt: Kosher salt is best.
- Honey: Agave syrup is a great substitute. I don't recommend maple syrup because it has a very strong, smoky flavor.
For the Ranch Dressing
- Greek yogurt: Make sure it's plain and unsweetened, otherwise the mixture will taste funny. Sour cream works too.
- Ranch seasoning mix: This is usually in the spice aisle or next to the salad dressings at the grocery store.
See recipe card for quantities.

Step 1: Prep the jalapeños
Slice each jalapeño in half lengthwise and use a spoon to scoop out the seeds and membranes. The more you remove, the milder the heat.
Step 2: Mix & fill
Combine cream cheese, cheddar, crumbled bacon, garlic powder, smoked paprika, salt, and honey in a bowl. Mix until smooth and creamy, then spoon the filling generously into each jalapeño half.
Step 3: Air fry until golden
Lightly spray the air fryer basket with oil and place the stuffed jalapeños in a single layer. Air fry at 350°F for 7–10 minutes until the peppers are tender and the tops are lightly golden.
Step 4: Make the ranch & serve
While the poppers cook, stir Greek yogurt and ranch seasoning together until smooth. Let the poppers cool for 2–3 minutes after air frying, the filling stays very hot straight out of the basket.
Depending on who's coming over and what I'm craving that day, I like to switch up these garlicky jalapeño poppers with a crunchy topping or a little bit of bacon. Try my yummy twists:
Bacon-wrapped poppers: Wrap 1 slice of bacon around each stuffed jalapeño, and secure it in place with a toothpick. Air fry as usual or until the bacon is nice and crispy.
Add toppings: Crispy panko breadcrumbs, crispy bacon, sliced green onions, or any crispy breadcrumbs are an easy way to add some crunch to every bite.
Swap the dressing: If you're not a fan of ranch, use your favorite BBQ sauce or Frank's hot sauce for dipping instead.
Skip the heat: When your tolerance to heat is low, using mini bell peppers instead of jalapeños is a much better idea. They're lower on the Scoville scale in terms of heat.
More seasonings: Feel free to mix ¼-1/2 teaspoon taco seasoning, dried oregano, or ground cumin into the cream cheese mixture for extra flavor.
Did you know? The honey is the secret. A small drizzle of honey over the filling before air frying isn't just for sweetness, it helps the top caramelize slightly, giving you that golden, slightly sticky finish you see in the photos. Don't skip it!

Fridge
Assemble the stuffed jalapeno peppers as usual and refrigerate for up to 8 hours.
To reheat them
Place them in the air fryer at 300F for 3-5 minutes or until the cheese is warm and melty again. You can also microwave in 20-second increments.
These simple tips and tricks will help you use your trusty air fryer perfectly for the best jalapeno poppers with homemade ranch dressing every time:
Play with the heat: Adjust spice level by leaving a little membrane inside the jalapeños for more heat or removing it completely for a milder version.
Temperature matters: Make sure the cream cheese is fully softened so the filling mixes smoothly without lumps. If it has small lumps, it's okay because the cheese will soften and melt in the air fryer anyways.
Reduce clean-up: I love lining the bottom of my air fryer with parchment paper so it can catch any juices or melted cheese that bubbles over. Once the peppers are done, I just have to toss the paper away.
Don't over-fill: Leave a small gap at the top of the jalapeños to prevent spilling while air frying.
Let set: Once ready, let them rest for a few minutes so the filling sets and becomes easier to handle. If you slice into them right away, the cream cheese will simply ooze out.
Make them more golden brown: If you prefer extra browning on top, add 1–2 extra minutes of cooking time at the end.
Avoid over-cooking: Start checking at the 7-minute mark to avoid overcooking. If you leave them in the air fryer for too long, the filling will dry and begin to crack, so it'll no longer be super creamy.
HACK: To keep the filling from sliding out, optionally pop the stuffed jalapeños in the freezer for 10 minutes before air frying. The filling firms up slightly so it stays perfectly centered and doesn't melt out onto the basket during cooking.
Here's what other air fryer-loving home cooks are asking about these cheesy jalapeños for the summer:
Absolutely! Wrap the stuffed jalapeno halves with a bacon strip and secure with a toothpick. Air fry as usual.
What if I can't have dairy?Although I've never made them this way, you can certainly use dairy-free cream cheese and dairy-free cheddar for this recipe.
Are they spicy? Not at all. However, jalapenos are still fresh peppers and sometimes they can be. If your heat tolerance is usually low, I recommend making this recipe with mini bell peppers instead.
