I often bake muffins and tea time cakes for my family. Everyone enjoy it as a evening snacks with a cup of hot tea or coffee. This Chocolate Muffins are soft, spongy and delicious in taste.

Eggs make these muffins more moist, tasty and walnuts enhances the flavour and texture of it. These chocolate Walnut Muffins are perfect for any casual tea party or evening snacks.

I have posted so many eggless muffins and cake recipes so this time I made these chocolate Walnut Muffins with eggs. These Muffins are just perfect for toddler's evening snacks and for crunchiness I have added chopped walnuts.

Ingredients

  • 1.5 cup All purpose flour
  • 3 tbsp cocoa powder
  • 1/2 tsp baking powder
  • ¾ tsp baking soda
  • Pinch of salt
  • 1/2 cup unsalted butter at room temperature
  • 1 cup sugar powder
  • 3 Eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped Walnuts
Instructions

Preheat oven at 180°C for 10 mins
In a large mixing bowl take butter and sugar powder, beat smooth until fluffy & light.
Add 1 by 1 egg gradually and beat it, then add vanilla extract & beat at low speed to combine it well.
In another bowl, sieve all purpose flour, cocoa powder, baking soda, baking powder and salt.
Add the dry ingredients to the wet ingredients gradually in 2 to 3 batch and fold the batter until combines well.
Then add chopped walnuts and fold it.
Now pour the batter into the lined cupcake tray & tap it twice to remove air bubbles.
Bake at 180°C for 20 to 25 minutes or until the toothpick inserted in the center comes out clean.
Once baked, remove the muffin pan from the oven.
Carefully remove the muffins from the tray and transfer it to a wire rack, allow to cool down completely.
Tips
  • Use butter and eggs at room temperature.
  • Don't overmix the batter & make sure the batter is lump free.
  • Garnish the muffins with some dry roasted chopped walnuts or chocolate sauce.
